Achari Daal Dilli Style, Lentil Kheer And Daal Mash & Keema by Shireen Anwer

Ingredients For Lentil Kheer:

  • Milk  1 1/2 kg
  • Boiled rice  4 tbsp
  • Boiled moong ki daal  4 tbsp
  • Sugar  1/2 cup
  • Condensed milk  4 tbsp
  • Powdered milk  1/2 cup
  • Almonds sliced  2 tbsp
  • Pistachio sliced  2 tbsp
  • Kewra sliced  1 tbsp
  • Green cardamom grinded  1/2 tsp

Method:

  1. Keep the rice and moong ki daal in water for 30 minutes.
  2. Now deep fry both of them in water, so that it is tendered well.
  3. Then mix both of them and keep them on a side.
  4. Now pour milk boil it, add rice and add lentil mixture cook it for 10 to 15 minutes.
  5. Then add dry milk mix it well.
  6. Now add sugar cook it well, until it becomes thick.
  7. Then take it out and add condensed milk, green coriander, chopped kewra, almonds and pistachio slices, serve it cool.

Ingredients For Daal mash & Keema:

  • Daal mash soaked  1 cup
  • Mince  1/2 kg
  • Onion  1 sliced
  • Ginger garlic  1 tbsp
  • Chili powder  1 tbsp
  • Salt  1 1/2 tsp
  • Oil  1/2 cup
  • Turmeric  1/2 tsp
  • Green chilies  2 to 3 chopped
  • Tomatoes  2
  • Allspice  1 tsp
  • Coriander leaves chopped  2 to 3

Method:

  1. Pour oil in a pan, add slices to make it brown.
  2. Now add ginger garlic paste, mince fry it well.
  3. When it turns to brown, then add salt, turmeric, chopped red chilies, chopped tomatoes, add tomatoes then roast it.
  4. When it leaves oil then add wet lentils, water then tender it.
  5. In the end add green chilies, green coriander, chopped garam masala for simmering it and serve it with roti.

Ingredients For Achari Daal Dilli Style:

  • Chana daal  1 cup
  • Arhar daal  1/2 cup
  • Turmeric  1/2 tsp
  • Salt  1 1/2 tsp
  • Kasori methi  1 tsp
  • Ghee  1 tbsp
  • Ghee 1/2 cup
  • Onion chopped 1/2 cup
  • Allspice  1/2 tsp
  • Chili powder  1 tsp
  • Cumin   1/2 tsp
  • Ginger  1 tsp

Ingredient For Tarka:

  • Khatai powder  1/4 tsp
  • Mango pickle  2 tbsp
  • Green chilies whole  3
  • Crushed garlic  1 tsp
  • Tomatoes  2
  • Coriander powder  1/2 tsp

Method:

  1. Firs keep the chanay ki daal and arhar dal in water for 30 minutes.
  2. Now pour water, add salt, turmeric, fenugreek leaves, ghee, boil it well until it is tendered well.
  3. For making tarka, pour oil add ghee, add chopped onions, add ginger garlic paste for frying, until it becomes light brown.
  4. Now add chopped cumin, chopped tomatoes, fry it for 10 minutes, until tomatoes are tendered well.
  5. Then add chopped red chilies, chopped garam masala, chopped coriander, chopped mango pickle, mix it well then add whole green chilies.
  6. After that add lentil mixture cook it for 5 minutes then serve it hot.
