Ingredients For Suva Rice:
Mutton 1/2 kg
Rice 300 gm
Onion 2
Yogurt 250 gm
Green chilies 2 to 3
Ginger garlic paste 2 tbsp
Bay leaf 2 to 3
Clove 4 to 5
Big cardamom 3 to 4
Cinnamon 2 to 3
Black cumin 1 tsp
Black pepper 2 tbsp
Suva 1 bunch
Green coriander 1/2 bunch
Clarified butter 1/2 cup
Salt to taste
Method:
Pour ghee in a pan, add onions make them golden brown, and keep it on a side.
Now pour oil add curry leaves, big cardamom, cinnamon, cloves, black cumin, to make it crispy.
Then add mutton, ginger garlic paste for roasting.
Now pour water as per needed, to tender the mutton.
Then filter the stove, add waste the remaining whole masala.
Now pour ghee in a separate pan.
Then add brown onions and add ginger garlic paste.
Now add beaten yogurt, then give bhagar in stock.
Put boiled rice in a stock, and let it cook.
Now simmer it well.
When it is simmered well then add suva and add green coriander mix it well, dish out it.
Ingredients For Suandhro Ain Beeh:
Drum sticks 3 bunches
Beeh 50 gm
Onion 50 gm
Tomato 1 medium
Chopped ginger 2 tbsp
Yogurt 2 tsp
Turmeric powder 3 medium
Black pepper 1 tsp
Coriander powder 1/2 tsp
All spice powder 1/2 tsp
Suva 1/2 bunch
Oil 3 to 4 tbsp
Salt to taste
Method:
First wash the beeh and cut it into shapes.
Now pour oil in a pan, add chopped ginger, onion for frying.
Then add drumsticks for frying.
Then add tomatoes for roasting.
Now add yogurt, turmeric, chopped black pepper, chopped coriander, chopped garam masala, salt, cook it well.
After that pour water and keep it for tender.
When the mixture becomes thick then take it out in a dish, garnish it with suva then serve.
