Daal Gosht, Atay Ka Halwa And Punjabi Karela Keema by Rida Aftab

Ingredients For Daal Gosht:

  • Boiled gram lentil 2 cup
  • Meat  1/2 kg
  • Onion  1
  • Curry leaves  6
  • Tomatoes 4
  • Green chilies  6
  • Coriander leaves  1/2 bunch
  • Oil  1/2 cup
  • Red chili powder 2 tsp
  • Coriander powder 2 tsp
  • Turmeric  1 tsp
  • Salt  1 tsp
  • Green chilies/ coriander leaves as required

Method:

  1. Pour oil add onions make it golden brown.
  2. Now add tomato pieces.
  3. Along curry leaves, chopped red chilies, salt, chopped turmeric, chopped coriander then roast it.
  4. Now add mutton, water, cook it on low temperature and leave it to cook for half an hour.
  5. Then add boiled peas, cook it for 15 minutes.
  6. In the end turn off the stove and add green chilies, green coriander.

Ingredients For Atay Ka Halwa:

  • White flour  1/2 kg
  • Ghee  375 grams
  • Icing sugar  1/2 kg
  • Khoya  250 grams
  • Cardamom powder  1/2 tsp
  • Yellow food color  1 pinch
  • Dry fruits  as required
  • Milk  1/2 cup

Method:

  1. Now pour ghee and add white flour.
  2. When it starts to smell then add chopped sugar, chopped cardamom, roast it well.
  3. Now pour milk along a pinch of yellow color.
  4. Then simmer it for 10 minutes, add chopped dry fruits then serve.

Ingredients For Punjabi Karela Qeema:

  • Bitter gourd  1/2 kg
  • Mince  1/2 kg
  • Coriander leaves  1 bunch
  • Oil   1 cup
  • Onion  2
  • Tomatoes  1/2 kg
  • Green chilies  15
  • Chopped black pepper 1 tsp
  • Red chili powder 1 tsp
  • Turmeric  1 tsp
  • All spice  1 tsp
  • Chopped coriander  1 tsp
  • Ginger garlic paste  2 tsp
  • Lemon juice  2 tbsp
  • Salt 1-1/2 tsp

Method:

  1. First cut the bitter gourd in thin slices, add salt and leave it for 2 hours.
  2. Now wash the bitter gourd nicely and make a bag drain its water.
  3. Then pour oil in pan heat it, add green chilies and fry them all and take it out.
  4. After that put onions make them golden brown ant take it out.
  5. Now put mince in same oil, add ginger garlic paste, chopped red chilies, salt, turmeric, chopped garam masala, chopped coriander and tomatoes cover and let it cook for 20 minutes.
  6. After that add bitter gourd, green chilies, green coriander.
  7. In the end add lemon juice simmer it for 10 minutes and then serve.
