Masala Egg Paratha, Vegetable Kabab And Gobi Keema by Zubaida Tariq

Ingredients For Vegetable Kabab:

  • Boiled potatoes  1/2 kg
  • Grated carrots  2
  • Chopped soya  2 bunch
  • Green chilies 6
  • Peas  1/2 cup
  • Green beans  8
  • Crushed cumin  1 tsp
  • Black cumin  1 tsp
  • Red chili flakes  1 tbsp
  • Rice flour  3 tbsp
  • Egg white 2
  • Bread crumbs  as required
  • Salt  to taste
  • Lemons  2
  • Green coriander  1 bunch
  • Oil  to fry

Method:

  1. First put the peas, green beans in a chopper and make small kababs.
  2. Now add boiled mashed potatoes.
  3. Then add carrot, green beans, peas, green coriander, chopped green chilies, lemon juice, chopped red chilies, chopped white cumin, chopped black pepper, rice flour, salt mix them and make kabab.
  4. Now dip them in egg white and paste bread crumbs.
  5. Now pour oil in a frying pan, fry the kababs in a pan.
  6. When they become golden brown then serve it with tamarind chutney.

Ingredients For Gobhi Qeema:

  • Cauliflower  1
  • Chicken mince 1/2 kg
  • Green chilies  8
  • Chopped ginger  2 tbsp
  • Turmeric  1 tsp
  • Red chili powder  1 tbsp
  • Ginger garlic paste  1 tbsp
  • Salt to taste
  • Oil  1 cup
  • Chopped onion  2
  • Chopped soya  2 bunches
  • Green coriander  1 bunch

Method:

  1. Pour oil in a pan, add chopped onions make them golden brown.
  2. Now add ginger garlic paste, turmeric, chopped red chili, roast it well, add chopped soya, roast it lightly then add chicken mince.
  3. Along salt and roast it well.
  4. After that simmer the cauliflower for 5 minutes.
  5. In the end add green coriander, chopped green chilies, chopped ginger simmer it for 5 to 10 minutes.
  6. In the end serve it with hot paratha.

  • Flour  2 cups
  • Eggs  6
  • Salt  to taste
  • Black pepper  1 tsp
  • Red chili flakes  1 tbsp
  • Green chilies  8
  • Chopped coriander  1/2 bunch
  • Fresh milk  1/2 cup
  • Turmeric 1/2 tsp
  • Clarified butter  as required
  • Flour  2 tbsp
  • Water  2 tbsp

Method:

  1. Put flour, salt knead it well.
  2. Then add flour, water mix it and make its paste thick.
  3. Now add egg, green chilies, green coriander, turmeric, milk, chopped black pepper,then add chopped red chilies, beat it well.
  4. Now pour ghee, fry the eggs nicely, stir it continuously make its pieces and cool it.
  5. Now make its portion and roll it. Then put some ready egg then leave its surrounding.
  6. Now put some wet flour and put another roti on its top, close its sides.
  7. After that heat the pan, steam it and pour oil or ghee with wooden spoon.
  8. When it turns to golden brown then paratha is ready.
  9. In the end serve it with hari chutney.
