Kaloonji Aloo, Gola Kabab And Chicken Methi Dana Handi by Zubaida Tariq

Ingredients For Chicken Methi Dana Handi:

  • Chicken boneless 1/2 kg
  • Mustard seeds  1/2 tsp
  • Whole red chilies  6
  • Green chilies  6
  • Black pepper  1 tbsp
  • Ginger garlic paste 1 tbsp
  • Lemons  2
  • Yogurt  1/2 cup
  • Turmeric  1 tsp
  • Green coriander  1 bunch
  • Mustard powder  1 tsp
  • Curry leaves  few
  • Oil  1 cup
  • Salt  to taste

Method:

  1. Pour oil in a pan, add fenugreek seeds and roast it lightly.
  2. Now add chicken boneless.
  3. Then add salt, turmeric, ginger garlic paste.
  4. When the chicken water tries, then add yogurt, whole red chilies, chopped green chilies, chopped black pepper, chopped mustard seeds, roast it lightly.
  5. Now put lemon juice, curry leaves, chopped green chilies, green coriander, simmer it for 5 to 10 minutes.

Ingredients For Gola Kabab:

  • Beef mince  1/2 kg
  • Bread slices  2
  • Lemons  3
  • Green chilies  4
  • Chopped coriander  1/2 bunch
  • Oil  1/2 cup
  • Black pepper  1 tsp
  • Papaya paste  1 tbsp
  • Gram flour  2 tbsp
  • Chopped garlic  2 tbsp
  • Seekh Kabab masala  2 tbsp
  • Fresh cream  2 tbsp
  • Red chili powder  1/2 tbsp
  • Salt  to taste

Method:

  1. First put beef mince, seekh kabab masala, bread slices in a chopper.
  2. Now add flour, salt, chopped red chili, chopped and raw papaya, mix it well.
  3. Now make kababs of big shape in a frying pan and shallow fry it.
  4. When the kabab is fried well then add lemon juice, chopped ginger, chopped green chilies, chopped green coriander, chopped black pepper and simmer it for 5 minutes.
  5. In the end serve the delicious gola kabab.

Ingredients For Kaloonji Aloo:

  • Potatoes  1/2 kg
  • Onion seeds  1 tsp
  • Red chili flakes  1 tsp
  • Turmeric  1 tsp
  • White cumin  1/2 tbsp
  • Salt  to taste
  • Green chilies  8
  • Lemons  3
  • Garlic cloves  8
  • Oil  to taste
  • Brown sugar  1 tbsp

Method:

  1. First wash the kaloonji aloo and boil it, peel its skin and make its small cubes.
  2. Now pour oil in a pan, heat the oil deep fry the potatoes make them golden brown take them out.
  3. Then pour oil in a tin.
  4. After that put the fried potatoes, in empty pan, sprinkle salt, turmeric, chopped red pepper, white cumin, garlic cloves, chopped green chilies, kaloonji roast it lightly.
  5. Now put lemon juice, brown sugar, roast it for 5 minutes, then serve it hot.

  • tried 2 recipes, kalonji aloo and gola kababs.I used only 1 tbsp cream in gola kababs and did not add hara dhaniya. I processed mince with all ingredients for kababs. Both recipes are delicious and correct . Specially gola kababs are so creamy and soft.Plz try and post ur comments. jazak allah
