Chatpaty Karelay, Masalay Dar Mutton And Murgh Imli Chawal by Zubaida Tariq

Ingredients For Masalay Dar Mutton:

  • Mutton  1/2 kg
  • Chopped onions  3
  • Yogurt  1 cup
  • Ginger paste  1 tbsp
  • Whole red chilies  6
  • Turmeric  1 tsp
  • Whole green chilies 6
  • Whole black pepper 1 tsp
  • Garlic  6 cloves
  • Lemons  2
  • Salt  to taste
  • Green coriander 1/2 bunch
  • Oil  1 cup

Method:

  1. Pour oil in a pan, add chopped onions make them golden brown.
  2. Now add mutton, turmeric, chopped ginger garlic paste, salt.
  3. During this, add whole red chilies, whole green chilies, garlic cloves, whole black pepper stir it well.
  4. When the water dries then add add mutton to tender.
  5. When the water dries then add yogurt, chopped masala roast it well.
  6. When the oil starts to separate then add lemon juice, chopped green coriander, simmer it for 5 to 10 minutes.
  7. Delicious masalay dar mutton is ready.

Ingredients For Murgh Imli Chawal:

  • Rice 2 - 2 1/2 cups
  • Chicken  1/2 kg
  • Green chilies  10
  • Tamarind  1/2 cup
  • Ginger garlic paste  1 tbsp
  • Crushed cumin 1 tsp
  • Black pepper  1 tsp
  • Chopped onion 4
  • Salt  to taste
  • Curry leaves  few
  • Oil  1 cup

Method:

  1. Make the onions brown then spread them on tissue.
  2. After that pour oil in a pan, roast it well add thick tamarind paste.
  3. Now pour oil and make half layer of chicken, chicken and half onions.
  4. Then make another layer of rice then simmer it.
  5. When the steam starts to comes up then put tamarind paste, chicken rice is ready.

Ingredients For Chatpaty Karelay:

  • Bitter gourd  1/2 kg
  • Mustard seeds  few
  • Turmeric  1 tsp
  • Red chili powder 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Green chilies  6
  • Tamarind paste  1 cup
  • Jaggery 2 tbsp
  • Salt to taste
  • Onion seeds 1 tsp
  • Curry leaves few
  • Oil as required

For Bitter gourd:

  • Turmeric 1 tsp
  • Salt  as required
  • Tamarind paste 1 tbsp
  • Jaggery  1 tsp

Method: 

  1. First cut the bitter gourd in long and thin slices, take out its seeds.
  2. Now put them in filter, add tamarind thick paste, jaggery, salt, turmeric and leave it for 10 minutes.
  3. Then wash it nicely and put it into filter.
  4. After that pour oil in a pan, add bitter gourd and fry it well and golden brown them and take them out.
  5. Now pour oil and few drops of fenugreek seed.
  6. When the smell starts to come then add turmeric, chopped red chili, salt, tamarind paste, jaggery, curry leaves, onion seed, ginger garlic paste, fry it lightly, roast and add bitter gourd.
  7. Simmer it for 5 minutes.
  8. Delicious bitter gourd are ready to eat.
