Khatti Meethi Biryani, Spicy Beef Balls With Chutney And Aloo Khas by Rida Aftab

Ingredients For Khatti Meethi Biryani:

  • Boneless chicken 1 kg
  • Sela rice 1/2 kg
  • Yogurt  1 cup
  • Tomato 25 grams
  • Onion  25 grams
  • Mint leaves 1 bunch
  • Small green chili 10
  • Lemon  4
  • Brown sugar  1 tbsp
  • Black cumin 1 tsp
  • Black pepper corns  1 tsp
  • Small cardamom  4
  • Star anise  1/2 tsp
  • Red chili  1 -1/2 tsp
  • Turmeric 1 tsp
  • Lemon juice 4 tbsp
  • Salt  2 tsp
  • Oil  1 cup
  • Ginger garlic paste  2 tsp

Method:

  1. First marinate the chicken boneless with yogurt, red chili, salt, turmeric, chopped green chilies, mint, lemon, ginger garlic paste.
  2. Make the onions brown.
  3. Then add cumin, chopped black pepper, small coriander, star anise.
  4. When the smell appears, then put the marinated chicken and cover it.
  5. When the chicken tenders then add brown sugar, chopped tomato mix it well.
  6. Put boiled rice simmer it well.

Ingredients For Spicy Beef Balls With Chutney:

  • Mince 1/2 kg
  • Onion  4
  • Garlic 4 cloves
  • Lemon juice  2 tbsp
  • Whole round chili 6
  • Whole coriander 2 tsp
  • Fennel seeds 2 tsp
  • Mustard paste 1 tsp
  • Chaat masala  1 tsp
  • Egg  1
  • Green chilies  4
  • Oil  as required
  • Salt  1 tsp

For Making Chutney:

  • Red chili  4
  • Cumin seeds  1 tsp
  • Tomato 1
  • Tamarind juice  1 cup
  • Garlic  4 cloves
  • Jaggery  1 tbsp
  • Lemon juice 1 tbsp
  • Salt  1/2 bunch
  • Mint leaves  1/2 bunch

Method:

  1. First put the mince, onion, garlic cloves, lemon juice, whole chilies, whole coriander, fennel seeds, mustard paste, chaat masala, salt, green chilies and chop them.
  2. When they are mixed well then make small kababs pour oil for frying.
  3. For making chutney put cumin, red chili, tomato, tamarind juice, garlic cloves, jaggery, lemon juice, salt, mint blend it nicely.
  4. Chutney is ready.

Ingredients For Aalo Khas:

  • Potato  1/2 kg
  • Chopped red chili  2 tsp
  • Turmeric 1 tsp
  • Yogurt 1/2 cup
  • Tomato 4
  • Curry leaves 4
  • Cream  2 tbsp
  • Finely chopped ginger  1 tbsp
  • Coriander  1/2 bunch
  • Green chili  2-3
  • Oil 1/2 cup
  • Salt  1/2 tsp
  • Onion  1
  • Garlic  4 cloves
  • Cumin seeds  1 tsp

Method:

  1. First cut the potatoes in small pieces.
  2. Now pour oil add potato pieces for frying.
  3. Then put the tomatoes, onion, yogurt in a blender.
  4. After that pour oil, garlic cloves, cumin, chopped red chilies, turmeric, curry leaves, salt.
  5. When the smell appears then add yogurt, onion mixture roast it well.
  6. Now add fried potatoes, green coriander, green chilies, chopped ginger simmer it for 10 minutes.
  7. In the end take it out in a dish and add cream.

  • daniyamohsin thanx for ur message. keep chking this website for nice chicken recipes.I tried this biryani too,its good so do try it. Just add lemon slices only in layering. For ridas recipes: try her butter chicken red masala, pepper cumin chcken. u can search these on this site.shirin anwar chcken dishes:mirch masala chicken, dam ka murgh, galawat murgh, purbi pasanday are some of her dishes on which I hav commented.good luck

  • I USED ONLY 50 GMS ONION IN KABAB RECIPE. Its better to process mince with 2 bread slices and then add remaining ingredients and process.Dont use mustard paste and egg, lemon juice. real flavour will come from fennel seed, chat masala.jazak allah

  • Tried spicy beef balls few days ago. although the taste was good but kababs turned out hard. so next time I will add 2 tbsp cream or yogurt to the mixture to make them softer.

  • Tried aloo khas. i added 250 gms gobhi too so it can be aloo gobhi khas also. I used 1/2 cup yogurt, 350 gms tomatoes. for extra flavour I added 1 tbsp brown sugar . Very good recipe.
