Dhuwan Dahi Gosht, Mirchi Cheelay And Chatkharay Mirch by Chef Gulzar

Ingredients For Dhuwan Dahi Gosht:

  • Mutton 1/2 kg
  • Onion  4
  • Ginger garlic paste  1 tbsp
  • Red chili powder  1 tbsp
  • Coriander powder  1 tsp
  • Black pepper 1 tsp
  • Mint  1/2 bunch
  • Green chilies 4 to 5
  • Yogurt  1/2 kg
  • Oil  1/2 cup
  • Coal  1 piece
  • Salt  to taste

Method:

  1. Pour oil in a pan, add mutton.

  2. Now add onions, salt, chopped red chilies, ginger garlic paste mix it well and roast it well.
  3. Then pour water leave it to cook.
  4. Now add yogurt, in a mixing bowl, add chopped black pepper,beat it well.
  5. Then make a layer of yogurt mixture, sprinkle mint, chopped green chilies place a coal on its top sprinkle oil cover and let it simmer.
  6. Now take out in a serving bowl garnish it with green chilies, mint.
  7. Dhuwan dahi gosht is ready.

Ingredients For Mirchi Cheelay:

  • Yellow lentil  1 cup
  • White lentil  1 -1/2 cup
  • Green chilies  6 to 8
  • Garlic chopped 6 to 8 cloves
  • Green coriander 1/2 bunch
  • Green onion  1 to 2 sticks
  • Oil  for fry
  • Salt  to taste

Method:

  1. First put yellow lentil, white lentil keep them in water.
  2. Now add lentil in a chopper make smooth batter.
  3. Then add chopped green chilies, chopped garlic, green coriander, green onion, salt mix it well.
  4. Now pour oil in a pan, put it into a pan, spread it so that it become like a pan cake.
  5. Pour oil in its sides cook it on medium temperature, melt the chleelay.
  6. Mirchi Cheelay is ready.

Ingredients For Chatkharay Mirch:

  • Green chilies 250 gm
  • Yogurt  100 gm
  • Chat masala 4 tbsp
  • Lemon juice 2
  • Oil  for fry
  • Salt to taste

Method:

  1. First add green chilies take out its seeds.
  2. Then add yogurt, chaat masala, salt make its mixture.
  3. Then fill it into chilies, then place it in heat.
  4. Then put it into a muslin cloth.
  5. Then pour oil in a pan, fry the chilies take them out then serve.
