Chutney Dosa, 15 Minute Donuts, Tamarind Chicken And Mocha Frappe by Rida Aftab

Ingredients For Tamarind chicken:

  • Chicken drum sticks  6
  • Tamarind juice  1/2 cup
  • Onion seeds  1 tsp
  • Spring onion  10-12
  • Ginger garlic  2 tsp
  • Crushed black pepper 1 tsp
  • Turmeric   1/2 tsp
  • Coriander powder  2 tsp
  • Chopped onion 1 cup
  • Coriander leaves 1/2 bunch
  • Oil 1/2 cup
  • Salt  1/2 tsp

Method:

  1. Remove the meat from chicken drumstick in a way that it should not be separate from bone.
  2. Now pour water and let it cook.
  3. When the chicken drumstick are cooked well then remove it from stove.
  4. Then pour oil add chopped onion, fry it lightly, add green onion.
  5. Along tamarind paste to make it thick, onion seeds, ginger garlic paste, chopped black pepper, chopped coriander, salt and roast it well.
  6. After that add boiled drumstick mix it well.
  7. Then add green coriander, simmer it for 10 minutes then turn off the stove.

Ingredients For 15 Minutes Donuts:

  • Flour  1-1/4 cups
  • Baking powder 2 tsp
  • Salt  1/4 tsp
  • Milk  1/4 cup
  • Butter milk  1/4 cup
  • Sugar  1/4 cup
  • Melted butter 3 tbsp
  • Oil for frying 2 cup
  • Sugar   for coating

Method:

  1. Take a flour, baking powder, salt in a mixing bowl and mix it well.
  2. Now pour milk. butter milk, sugar in center of the mixing bowl and add melted butter and beat it.
  3. Then mix the baking powder, knead it well.
  4. Now make its portions and give it shape of doughnuts.
  5. Then fry it in hot oil.
  6. Then add sugar roll it well then serve.

Ingredients For Chutney Dosa:

For White Dosa:

  • White lentil flour  1/2 cup
  • Rice flour  1/2 cup
  • Hot water  as required

For Filling

  • Finely mixed yogurt 1 cup
  • Boiled peas  1 cup
  • Boiled potato  1 cup
  • Red chili powder  1 tsp
  • Fry cumin seeds  1 tsp
  • Curry leaf  4-6
  • Turmeric  1/2 tsp
  • Tamarind juice 1/2 cup
  • Brown sugar 1 tsp
  • Salt  2 tsp
  • Chopped onion  1
  • Oil  as required
  • Mint leaves  1 cup

Method:

  1. For making dosa: pour oil in a non stick pan, then put the dosa batter make them brown.
  2. Now pour oil in a pan, add boiled peas, boiled potatoes, chopped red chilies, chopped cumin, curry leaves, turmeric, tamarind paste, brown sugar, salt mix it well then turn off the stove.
  3. Now put the filling on dosa roti.
  4. Then put beaten yogurt, chopped onion, mint make the roll.

Ingredients For Mocha Frappe:

  • Full cream  milk powder 1 cup
  • Cocoa powder  2 tbsp
  • Chocolate chips 2 tbsp
  • Coffee  1 tsp
  • Ice  1 cup
  • Chocolate sauce  4 tbsp
  • Cold water  2 glasses
  • Vanilla essence  1/2 tsp

Method:

  1. First put the cream milk powder, cocoa powder, coffee, ice, water, vanilla essence, in a blender.
  2. Now put the chocolate chip, chocolate sauce on its top then serve.
