Ingredients For Kharey Masalay Ki Karahi:
Mutton 1/2 kg
Tomatoes 2
Garlic 4 cloves
Ginger 1 piece
Coriander leaves 1/4 bunch
Yogurt 125 gm
Nutmeg mace powder 1/2 tsp
Mix whole spices as required
Cumin powder 1 tsp
Dry red chilies 8-10
Turmeric 1/2 tsp
Crushed red pepper 1 tbsp
Salt to taste
Ghee 1/2 cup
Method:
First put the mutton pieces roast it without oil or with ghee.
When its water dries then add boiled and chopped yogurt, chopped garlic, chopped ginger, whole garam masala, dry red chilies, mix it well cover and let dry its water and leave it.
Now cover it for 15 to 20 minutes, add red chilies, salt, turmeric, chopped cumin, chopped nutmeg mace, mix it and let it cook for 8 to 10.
Tender the mutton, remove its cover and roast it on high temperature.
When the gravy becomes short then pour ghee add green coriander, ginger garlic garnish it then serve.
Ingredients For Drum Wings:
Chicken wings 1/2 kg
Chicken mince 250 gm
Ginger garlic paste 1 tbsp
Egg 1
Flour 2 tbsp
Corn flour 2 tbsp
Worchester sauce 2 tbsp
Crushed red pepper 1 tbsp
Black pepper powder 1/2 tsp
Lemon juice 2 tbsp
Onion 1 medium
Parsley 1/4 bunch
Salt to taste
Method:
First add chicken mince, onion, salt, chopped parsley chop it well.
Along black pepper. when it is mixed well then keep it on a side.
Now give the chicken wings shape of lollypop then marinate it by adding egg, chopped red chilies, flour, corn flour, worchester suace and salt.
Then stiff the the chicken mince at the lower part of the chicken wings.
Place them on a oven tray.
When the wings becomes ready then preheat it on 180 degree C for baking it 20 to 25 minutes.
When its color changes then take it out and serve it hot with sauce or ketchup.
Ingredients For Fruit Pulao:
Rice 300 gm
Fruit cocktail 1 tin
Onion 1
Mix whole spice as required
Green chilies 4
Cumin seeds 1 tbsp
Salt to taste
Ghee 1/2 cup
Water 1 1/4 - 1 1/2 glass
Peas boiled 1 cup
Method:
First pour ghee, add onions, khara masala, green chilies, whole cumin roast it for 1 to 2 minutes.
When the onions starts to become soft then pour water, salt, boiled peas, cocktail fruit.
When it starts to cook then add watered rice cook them on low temperature.
When the rice starts to rise then and water boiles then mix them and simmer it for 8 to 10 minutes.
Delicious fruit pulao is ready.
