Khawse, Warm Noodles Salad And Poached Chicken by Zarnak Sidhwa

Ingredients For Khawse:

  • Chicken boneless 1/2 kg
  • Onion  1
  • Ginger garlic paste  1 tbsp
  • Red chili powder  2 tsp
  • Coriander powder  1 tsp
  • Turmeric powder  1/2 tsp
  • Coconut milk powder 4 tbsp
  • Salt  1 tsp

Ingredients For Curry:

  • Oil  1 tbsp
  • Onion, chopped 1 small
  • Ginger garlic paste  1 tsp
  • Red chili powder  1 tbsp
  • Turmeric powder  1 tsp
  • Gram flour  6 tbsp
  • Salt  1 tsp
  • Coconut milk  2 cups

To Serve with:

  • Spaghetti, boiled  1 packet
  • Fried spaghetti  a few
  • French fries  a few
  • Lemon wedges a few
  • Spring onions  2
  • Boiled eggs  2
  • Green chilies 3
  • Garlic  4 cloves
  • Onion sliced  3 tbsp
  • Coriander leaves  4 tbsp
  • Red chilies  1 tbsp

Method:

  1. For the chicken, heat oil, add onion, ginger garlic paste, red chili powder, coriander powder, turmeric powder, salt and saute, add chicken and saute, slowly add coconut milk dissolved in water and keep stirring till thick and chicken is cooked.
  2. For the curry, heat oil, add onion, brown slightly, add ginger garlic, red chili powder, turmeric powder, salt, add roasted gram flour mixed with water and strain and use, keep stirring, add coconut milk, let boil till it thickens.
  3. To serve, mix curry with chicken and put over boiled noodles in a serving dish.
  4. Serve all the condiments in separate small bowls.

Ingredients For Warm Noodles Salad:

  • Olive oil  7 oz
  • Mushrooms  7 oz
  • Roasted peanuts  100 gm
  • Fresh coriander  1 tbsp
  • Tomato chopped  1
  • Sesame oil  1 tbsp
  • Rice noodles  250 gm

Method:

  1. Heat the oil, add the mushrooms and fry.
  2. Add the remaining ingredients.
  3. Mix together until well combines.
  4. To serve, divide the noodles mixture equally among four serving bowls.
  5. Carve the chicken breast into thin slices and place one sliced breast on top of each portions of noodles

Ingredients For Poached Chicken:

  • Milk  250 ml
  • Cardamom pod 1
  • Bay leaf  1
  • Grated nutmeg  to taste
  • Salt  to taste
  • Black pepper  to taste
  • Chicken breast 4

Method:

  1. In a pan, bring the milk, cardamom pod, bay leaf, nutmeg and seasoning to a simmer.
  2. Add the chicken and poach for 20-25 minutes, or until completely cooked through.
