Ingredients for Chicken Nihari:

  • Chicken 1-1/2 kg
  • Ghee or Oil 1 cup
  • Oil for bhagar 1/4 cup
  • Fried onion 1 cup
  • Flour or Maida 1/4 cup
  • Special spice powder 2 tbsp
  • Red chilli powder 1 tbsp
  • Degi mirch powder 1 tsp
  • Turmeric powder 1/4 tsp
  • Coriander powder 1 tbsp
  • Salt to taste
  • Ginger garlic paste 2 tbsp

For Special Spice Powder:

  • Clove 10-12
  • White cardamom 10
  • Black cardamom 3 tbsp
  • Black salt 1/2 tsp
  • Fennel 3 tbsp
  • Dry ginger 1 tbsp
  • Nutmeg mace powder 1/2 tsp

For Garnish:

  • Fried onion as required
  • Chopped green chilli as required
  • Chopped ginger as required
  • Chopped coriander as required
  • Lemon wedges as required

Ingredients for Lal Atay Ky Naan:

  • Chaki ka ata 3 cup
  • Oil 1/4 cup
  • Yeast 1 tbsp
  • Sugar 1 tsp
  • Salt 1 tsp
  • Baking soda 1 pinch
  • Lukewarm water for dough
