Szechuan Orange Beef, South African Fried Chicken And Fattosh by Chef Zakir

Ingredients For Szechuan Orange Beef:

  • Beef undercut  1/2 kg
  • Dry red chilies 4-5
  • Oil  4 tbsp
  • Soya sauce  1 tbsp
  • Ginger paste  1 tbsp
  • Corn flour  2 tbsp
  • Orange juice  1/2 cup
  • orange rind chopped 1 tsp
  • Sugar  1 tsp
  • Chopped fresh red chilies  3-4
  • Crushed black pepper  1 tsp
  • Salt  to taste

Method:

  1. First add beef undercut make its small pieces, beat it with the help of hammer.
  2. Add whole red chilies.
  3. Now pour oil in a pan, add ginger garlic paste, dry red chilies, roast it till the water dries then cook it.
  4. Then add soya sauce, orange juice, orange skin, chopped fresh red chilies, sugar, chopped black pepper, salt cook it on low temperature.
  5. After that add corn flour mix it with water make the sauce thick take it out and then serve.

Ingredients For South African Fried Chicken:

  • Chicken with skin 1
  • Green chilies 4
  • Coriander leaves  1/2 bunch
  • Milk  1 cup
  • Flour  2 cup
  • Chili powder  2 tsp
  • Salt to taste
  • Oil  for fry
  • Plastic bag  1

Method:

  1. First cut the chicken into pieces.
  2. After that add green coriander, green chilies make them chop.
  3. Then add chicken marinate it with green coriander, green chilies, chopped red chili and salt.
  4. Now pour milk, add flour mix it well, so that the milk becomes thick.
  5. Then put it into chicken.
  6. Now put it into plastic bag, put remaining flour.
  7. Coat the chicken pieces with flour by putting them into bag.
  8. When all the ingredients are mixed well then pour oil,
  9. When it turns to golden color then take them out and serve it with sauce and ketchup.

Ingredients For Fattosh:

  • Pita bread  1
  • Cucumber  1
  • Tomato  2
  • Spring onion  2
  • Mint leaves  1/4 bunch
  • Coriander leaves  1/4 bunch
  • Parsley chopped  1/4 bunch
  • Olive oil  1/4 cup
  • Ice berg  half
  • Garlic paste 1 tsp
  • Black pepper powder 1/4 tsp
  • Lemon juice  3 tbsp
  • Salt  to taste

Method:

  1. First add cucumber, half ice berg, chopped parsley, tomatoes, green onion, cut all the vegetables in small pieces.
  2. Along green coriander, chopped mint.
  3. Make the pita bread golden brown from both sides.
  4. When all the vegetables becomes cut in small pieces, then put them in a bowl.
  5. Then put garlic paste, lemon juice, chopped black pepper, salt and olive oil mix it well.
  6. Then take out all the vegetables on platter.
  7. Put the dressing on it.
  8. Together put fried pita bread and serve.
