Masala Aloo Stick, Spring Roll And Mong Daal Pakora by Chef Gulzar

Ingredients For Masala Aloo Stick:

  • Potato  1 kg
  • Tomato puree  1 cup
  • Tomato  2 to 3
  • Tamarind paste  1/2 cup
  • Red chili crushed 2 tbsp
  • Crushed cumin  1 tsp
  • Black pepper 1 tsp
  • Green chilies 6 to 8
  • Ginger garlic paste 2 tbsp
  • Oil  4 to 5 tbsp
  • Salt  to taste
  • Tooth picks  as required
  • Chat masala  for garnish
  • Green coriander  for garnish

Method:

  1. First pour oil in a pan, add ginger garlic paste, potatoes roast it well.
  2. When the potatoes turns to golden brown then add tomato, tomato puree, chopped red chilies, chopped and crushed cumin, chopped green chilies, salt and water cook it well tender it make its gravy thick.
  3. Now make the paste of tamarind paste and roast it.
  4. When oil starts to separate then dish out it.
  5. In the end put the toothpick and put green coriander, sprinkle chaat masala then serve.

Ingredients For Spring Roll:

  • Chicken mince  1/2 kg
  • Sliced cabbage 1/2
  • Green chili  4 to 5
  • Sliced onion 1/2
  • Sliced carrot  1
  • Green onion  1/2 cup
  • Chopped garlic  1 tbsp
  • Black pepper  1 tsp
  • Roll strips
  • Oil
  • Chinese salt

For Pasting:

  • White flour  as required

Method:

  1. Make a thick paste of white flour, Put slices of cabbage, chicken mince, chopped green onion, carrot, chopped green chilies, chopped garlic, salt, chinese salt, chopped black pepper mix it well.
  2. Fill the roll strips with mixture for frying.
  3. Take out the roll in a serving dish, garnish it with salad leaves, cucumber then serve.

Ingredients For Moong Daal Pakora:

  • Yellow lentil  250 gm
  • Garlic paste  1 tsp
  • All spice powder  1 tsp
  • Cumin powder  1 tsp
  • Turmeric powder  1 tsp
  • Red chili powder  2 tbsp
  • Oil  for fry
  • Salt  to taste

Method:

  1. First wash the yellow lentil.
  2. Then add yellow lentil in chopper make its paste, garlic paste, chopped garam masala, chopped cumin, chopped turmeric, chopped red chilies, salt beat it well.
  3. Then pour oil in a pan fry the mixture like pakora.
  4. In the end take it out in a dish then serve.
