Khaosay, Samosay And Memni Sheer Korma by Shireen Anwer

Ingredients For Khaosay:

  • 1/2 kg chicken/ beef cubes
  • 1 tsp ginger garlic
  • 2 tsp red chili powder
  • 1 tsp salt
  • 1 tsp coriander powder
  • 1/2 4 tsp turmeric
  • 1 tsp crushed cumin
  • 4 tbsp tomato paste
  • 2 tbsp roasted desiccated coconut
  • 1 tbsp poppy seeds
  • 4 tbsp oil

For Curry:

  • 1/2 kg yogurt
  • 4 tbsp gram flour
  • 1 tsp salt
  • 8-10 green chili paste
  • 2 tbsp coriander paste
  • Curry leaves few
  • 1/4 tsp turmeric
  • 1 tsp cumin
  • 1 tsp ginger garlic 
  • 1 packet boiled spaghetti
  • Fried onion  as required
  • Green chilies as required
  • Coriander  as required
  • Fries/ chips as required
  • Papri  as required

Method:

  1. Pour oil in pan heat it, add ginger garlic paste for frying, until it color becomes light golden.
  2. Now add tomato paste, chopped red chilies, salt, chopped cumin, turmeric, chopped coriander, chopped and crushed coconut, raisins, water fry it well.
  3. Then add chicken mix it well and cook it.
  4. Pour water in pan.
  5. For Curry add beaten yogurt, salt, green chili paste, ginger garlic paste, water cook it on low temperature, until it becomes thick.

Ingredients For Samosay:

  • 1/2 kg beef mince
  • 1 tsp salt
  • 9-10 green chilies
  • 2 tbsp coriander
  • Few mint leaves
  • 1 tsp cumin 
  • 1 1/2 tsp ginger garlic paste
  • 1/4 tsp turmeric
  • 250 grams spring onion
  • 24 samosa patian

Method:

  1. First put beef mince, salt, ginger garlic paste, green chili paste, cumin, green coriander, mints, turmeric mix it well and cook, until it tenders.
  2. When the mince starts to cook well then add green onion, mix it and cool it well.
  3. After that make samosa and deep fry it.
  4. In the end serve it with ketchup or raita.

Ingredients For Memni Sheer Korma:

  • 1 liter milk
  • 2 tbsp ghee
  • 1 cup crushed vermicelli
  • 1/2 cup almonds crushed
  • 1/2 cup pistachios crushed
  • 2 tbsp charoli 
  • 2 dry dated sliced
  • 3/4 cup sugar
  • 1 tsp green cardamom
  • 1/4 tsp saffron

Method:

  1. First pour ghee heat it, add vermicelli pieces fry and make them golden brown.
  2. Now pour milk cook it for 5 minutes.
  3. Then add sugar, almonds, chopped pistachio, charoli, green cardamom, saffron, cook it for 10 minutes, put them in cups serve it hot.
