Potli Kabab, Tihari And Sweet Chilli Sauce by Chef Gulzar

Ingredients For Tihari:

  • Rice  500 gm
  • Yogurt  250 gm
  • Egg  3 to 4
  • Onion  1
  • Cinnamon  2 to 3 sticks
  • Green chilies  3 to 4
  • Tomato  3 to 4
  • Potato  3 to 4
  • Cardamom  3 to 4
  • Clove  3 to 4
  • Big cardamom  3 to 4
  • Ginger garlic paste 1 tbsp
  • Red chili powder 1/2 tsp
  • Turmeric  1/2 tsp
  • Whole cumin 1/2 tsp
  • Oil  1 cup
  • Salt  to taste

Method:

  1. First put cinnamon, potato boil it and keep it on aside.
  2. Now pour oil in a pan, add ginger garlic, onions make them golden brown.
  3. Now add cinnamon, cardamom, cloves, big cardamom, whole cumin, fry it for 2 to 3 minutes.
  4. Put red chilies in a mixing bowl, turmeric, salt beat it well, roast it so that oil separates.
  5. Now add rice, water, then add green chilies, cook it dry its water.
  6. After that simmer it and add potato, then take it out in a dish.
  7. Put boiled eggs on it for decoration and then serve it.

Ingredients For Potli Kabab:

Potli:

  • White flour 2 cups
  • Egg  3
  • Oil  for fry
  • Salt  to taste

For filling:

  • Chicken mince  300 gm
  • Green chilies  2 to 3
  • Ginger garlic paste  2 tbsp
  • Green coriander 1/2 bunch
  • Chopped onion  1
  • Crushed red chili  1 tsp
  • Black pepper  1/2 tsp
  • Crushed cumin 1/2 tsp
  • Whole coriander  1/2 tsp
  • All spice powder 1/2 tsp
  • Oil  as required
  • Salt to taste

Method:

  1. Put flour in a mixing bowl.
  2. Then add egg, salt knead it.
  3. Knead the flour hard.
  4. Now roll out it and cut it into pieces.
  5. Sprinkle flour on its top then make a layer after cutting it into strips.
  6. For Filling. put chicken mince, green chilies, ginger garlic paste, green coriander, onion, chopped red chilies, chopped black pepper, chopped and roasted cumin, whole coriander, chopped garam masala, salt and mix it.Now put chicken mixture in its center.
  7. Then make a bag and close it.Then pour oil and deep fry the bag.
  8. In the end garnish it with salad leaves and then serve it hot.

Ingredients For Sweet Chili sauce:

  • Kashmiri chili  5 to 6
  • Garlic  5 to 6 cloves
  • Vinegar  1/2 cup
  • Sugar  1/2 cup
  • Salt to taste

Method:

  1. Put kashmiri chilies, vinegar, garlic cloves, boil it and chop it.
  2. Pour water, sugar, salt and make it thick.
  3. When it becomes thick then cool it and put it in bottle.
