Lal Qila Mutton Karahi, Chicken Ala Malik And Sausage Kababs by Shireen Anwer

Ingredients For Lal Qila Mutton Karahi:

  • Mutton 1 kg
  • Ghee 1 cup
  • Ginger garlic paste 2 tsp
  • Green chilies 4
  • Coriander leaves  3 tbsp
  • Tomatoes  6
  • Salt  1 tsp
  • All spice  1 tsp
  • Chili powder  2 tsp
  • Yogurt  1/2 cup
  • Kasori methi  1 tbsp
  • Roasted cumin crushed  1 tsp

Method:

  1. First boil the mutton boil it in water.
  2. Now pour ghee, add ginger garlic paste, boiled mutton, chopped tomatoes, cover and let it cook for 10 minutes.
  3. Now add salt, chopped green chilies, chopped garam masala, chopped red chilies, cover and leave it to cook for 10 minutes, until the mutton tenders pour oil and its starts to comes up.
  4. Then add yogurt and fry it well.
  5. In the end add kasuri methi, chopped and crushed cumin, chopped coriander, simmer it for 5 minutes.

Ingredients For Chicken Ala milk:

  • Chicken  1 kg
  • Ginger garlic paste 1 tsp
  • Water 1 cup
  • Salt 1 tsp

Ingredients For Sauce:

  • Oil  1/2 cup
  • Cumin seeds  1 tsp
  • Onion seeds  1/2 tsp
  • Mustard seeds  1/2 tsp
  • Yogurt beaten  1 cup
  • Curry powder 1 tbsp
  • Tomatoes 4
  • Chili sauce 1/4 cup
  • Brown onion  2 tbsp
  • Cashew nuts  12

Method:

  1. First add chicken in water, add ginger garlic paste, salt, boil it well until it tenders.
  2. Now pour oil in pan, add cumin, onion seed, chopped mustard seeds, fry it for 1 minute.
  3. Then add chopped tomatoes, curry powder, chili sauce, beaten yogurt.
  4. Add boiled chicken in oven proof dish, pour ready sauce on chicken.
  5. Then place it in oven for 15 minutes.
  6. In the end add rice then serve.
  7. Then add fried onions, and fried cashew nuts.

Ingredients For Sausage kababs:

  • Undercut beef boti 1/2 kg
  • Ginger garlic 1 tbsp
  • Water 2 cups
  • Onion 1 cup
  • Bread slices 3
  • Allspice  1 tsp
  • Green chilies 5
  • Hot oil 4 tbsp
  • Crushed cumin 1 tsp
  • Salt  1 tsp
  • Chili powder 1 tsp
  • Coriander leaves 2 tbsp
  • Roasted gram flour  4 tbsp

Method:

  1. First add undercut boti, add ginger garlic, boil it well until water dries.
  2. Now add it chopped and make it cool. Along bread slices, chopped gram flour, chopped and crushed cumin, hot oil, green chilies, chopped green coriander, red chilies, chopped garam masala mix it well.
  3. Then give the sausage shape of kabab and deep fry it.
