Ingredients For Anda Chana Masala:
Boiled egg 3 to 4
Boiled chickpeas 1/2 kg
Stock 1 jug
Onion 2
Ginger garlic paste 1 tbsp
Chopped tomatoes 2 to 3
All spice powder 1 tbsp
Coriander powder 1 tbsp
Turmeric powder 2 tsp
Red chili powder 1 tbsp
Green chilies 5 to 6
Crushed cumin 1 tsp
Black pepper 1 tsp
Baking soda 1/2 tsp
Green coriander 1/2 bunch
Oil 2 cup
Salt to taste
Method:
First wash the chickpea and keep it water for a night.
Then wash the chickpeas in morning.
Pour stock and chickpea soft boil it.
When it becomes soft then turn off the stove.
Then pour oil in a pan, add onions, make them golden brown make its paste and roast it.
Then add garam masala powder, add coriander powder, turmeric powder, red chili powder, chopped and crushed whole cumin, chopped black pepper, green chilies, salt mix it and roast it for 2 to 3 minutes.
When masala dries then add tomatoes, mix it well.
When masala is cooked then mix the boiled chickpea mix it and cook it well so that masala is mixed well.
Add eggs, dish out it.
Garnish it with green coriander then serve.
Ingredients For Soji Aur Orange Ka Halwa:
Semolina 1/2 kg
Sugar 1/2 kg
Orange slices 4 to 5
Orange juice 1 cup
Small cardamom 4 to 5
Kewra essence few drops
Food colour 1/3 tsp
Clarified butter 1 cup
Orange zest for garnish
Method:
Roast the semolina in a pan.
Pour ghee, add cardamom, and sugar.
When it starts to cook then add semolina, orange slices, orange juice, pinch of yellow color, mix it well.
Stir it well, when the halwa begins to beat then add kewra and remove it from stove.
Garnish it with orange slices.
Soji orange ka halwa is ready.
Ingredients For Elahi Doodh Pati:
Milk 250 ml
Cardamom 6 to 8
Sugar 3 to 4 tbsp
Tea 3 to 4 tbsp
Method:
First pour oil add tea cook it well.
When it starts to boil then add sugar, cardamom, and cook it more.
When it starts to appear smell then filter it and serve.
Ingredients For Dal Pori:
White flour 1/2 kg
Clarified butter 2 to 3 tbsp
Baking soda 1 pinch
Boiled chickpeas 1/2 cup
Oil for fry
Salt to taste
Method:
First boil the daal and chopp it.
Now add flour, soda, salt, ghee, water, knead it well.
Then make its portions, knead it well like poriyan.
After that pour oil in a pan, fry it with poriyan.
Daal pori is ready.
