Amritsari Aloo Matar, Pineapple Custard Cream And White Chicken Korma by Zubaida Tariq

Ingredients For Pineapple Custard Cream:

  • Fresh milk  1 liter
  • Pineapple cubes 1 tin
  • Sugar  1 cup
  • Vanilla custard  4 tbsp
  • Fresh cream  1 packet
  • Chopped walnuts  1 cup

Method:

  1. Pour milk in a pan, add sugar cook it.
  2. When the sugar is saturated then put vanilla custard in cold milk.
  3. Stir it with wooden spoon make it thick.
  4. Then make it cool and add peeled and chopped walnuts, pineapple cubes.
  5. After that add fresh cream beat it.
  6. In the end add pineapple cubes, peeled and chopped walnuts and serve it cool.

Ingredients For Amritsari Aloo Matar:

  • Boiled potatoes 1/2 kg
  • Peas  1 cup
  • Ginger garlic paste 1 tbsp
  • Onion  2
  • Carom seeds  1/2 tsp
  • Salt  to taste
  • Gram flour  1/2 cup
  • Coriander 1/2 tbsp
  • Turmeric 1 tsp
  • Red chili  1/2 tbsp
  • All spice powder 1 tsp
  • Ani seeds  1 tbsp
  • Oil  as required

To Garnish:

  • Green chilies  4
  • Green coriander  1 bunch

Method:

  1. First peel the skin of tomato cut it like chips.
  2. Now add flour, nutmeg mace, ginger garlic paste, salt mix it well.
  3. Then add potato keep it for 10 to 15 minutes.
  4. Now pour oil in a pan add potato mixed in gram flour make them golden brown.
  5. Then pour oil in a pan, onions slices make them golden brown, peas, turmeric, chopped red chilies, chopped coriander, salt roast it well.
  6. After that add chopped pomegranate seeds, chopped garam masala simmer it for 5 minutes.
  7. In the end add chopped long green chilies, chopped green coriander then serve it hot with hot paratha.

Ingredients For White Chicken Korma:

  • Chicken 1 (14 pieces)
  • Yogurt 1 cup
  • Boiled almonds 15
  • Fresh cream 1/2 cup
  • All spice powder 1 tsp
  • White pepper  1 tbsp
  • Ginger Garlic paste  1 tbsp
  • Onion  2
  • Salt to taste
  • Small cardamom  4
  • Cinnamon 1 piece
  • Cloves  2
  • Big cardamom  2
  • Oil  1 cup
  • Green chili 8

Method:

  1. Pour oil in a pan, add chopped cloves, small cardamom, big cardamom, sugar, sesame seeds.
  2. When it starts to smell then add chicken pieces and add salt.
  3. When chicken water dries then change its color add ginger garlic paste, chopped onion, roast it nicely again.
  4. During this add yogurt, chopped white pepper, chopped garam masala, green chilies, mix it well.
  5. When the oil starts to separate then add yogurt mixture, after 5 minutes add fresh cream , boiled pistachio, simmer it for 5 minutes.
  6. Delicious white chicken korma is ready.
