Palak Paneer Handi Wala, Pickled Prawns And Black Pepper Bhuna Mutton by Shireen Anwer

Ingredients For Palak Paneer Handi Wala:

  •     Spinach 1/2 kg
  •     Soda by carbonate 1/4 tsp
  •     Water 1/2 cup
  •     Green chilies 3
  •     Oil  1/4 cup
  •     Tomatoes  2
  •     Allspice 1/2 tsp
  •     Green cardamom powder 1/4 tsp
  •     Chili powder 1/2 tsp
  •     Salt 3/4 tsp
  •     Milk  1/2 cup
  •     Cottage cheese  8 ounces

Grind together into a paste:

  •     Ginger 1 inch
  •     Green chilies 3
  •     Garlic crushed 1 tsp
  •     Onion  2 medium

Method:

  1. First put the spinach, soda bi carbonate, green chilies boil it well until water dries.
  2. Now chop the spinach and keep it on a side.
  3. Then pour oil in a pan, add chopped paste, make it golden brown.
  4. Now add garam masala, chopped red chilies, add blended tomatoes let it cook, until oil starts to comes up.
  5. Then add spinach mixture, chopped green coriander, milk simmer it for 10 minutes.
  6. First cut the cottage cheese cubes, deep fry in and make golden.
  7. Then put it into spinach mixture.

Ingredients For Black Pepper Bhuna Mutton:

  •     Mutton 1/2 kg
  •     Ginger garlic paste 2 tbsp
  •     Tomatoes 4
  •     Salt 1 tsp
  •     Black pepper crushed 1 tsp
  •     Oil 1/2 cup
  •     Yogurt 1/2 cup
  •     White cumin roasted 1 tsp
  •     Coriander seeds 1 tsp
  •     Allspice 1/2 tsp
  •     Coriander leaves chopped 2 tbsp
  •     Green chilies  4

Method:

  1. Heat the oil add ginger garlic paste, add mutton, fry it for 10 minutes.
  2. Now add chopped tomatoes, salt and chopped black pepper cover it and let it cook for 20 minutes.
  3. Then add yogurt cover and let it cook, until the mutton tenders.
  4. Now add chopped white cumin, chopped coriander, chopped garam masala.
  5. Chopped green coriander, green chilies simmer it for 5 minutes then leave it.

Ingredients For Pickled Prawns:

  •  Cleaned prawns 1/2 kg
  •  Ginger garlic paste 1 tbsp
  •  Salt 1 tsp
  •  Lemon juice 2 tbsp
  •  Tomatoes 2
  •  Coriander powder 1 tsp
  •  Chili powder 1 tsp
  •  Crushed red pepper 1 tsp
  •  Roasted cumin 1 tsp
  •  Allspice 1/2 tsp
  •  Crushed coriander 1 tsp
  •  Chopped onion  1
  •  Green chilies chopped 4
  •  Ginger julienne 1 tsp
  •  Coriander leaves chopped 2 tbsp
  •  Onion seeds 1/2 tsp
  •  Fenugreek seeds 1/4 tsp
  •  Button red chilies 6
  •  Mustard seeds  1/2 tsp

Method:

  1. First wash the prawns, add ginger garlic paste, salt, lemon juice marinate it for 30 minutes.
  2. Now heat the oil add onion seeds, fenugreek seeds, mustard seeds, small red chilies fry it for 1 minute.
  3. Then add onions for frying, so that it becomes soft.
  4. Now add chopped tomatoes, green chilies, chopped coriander, chopped red chilies, chopped red chilies, chopped and crushed cumin, garam masala and chopped and crushed coriander fry it for 10 minutes.
  5. Then marinate the prawns, fry it well, until the oil starts to comes up.
  6. In the end cut the ginger into julienne, garnish it with chopped green coriander then serve.
