Chicken Makhni, Vegetable Korma And Masala Chawal Andrasay by Chef Gulzar

Ingredients For Chicken Makhni:

  • Chicken 1/2 kg
  • Chopped onion 1
  • Garlic paste 1 tbsp
  • Green chili paste 2 tbsp
  • Yogurt 1 cup
  • All spice powder 1 tsp
  • Black pepper 1 tsp
  • Red chili powder 1 tbsp
  • Turmeric powder 1/2 tsp
  • Cumin powder 1/2 tsp
  • Butter 3-4 tbsp
  • Cream 1./2 cup
  • Green chilies 5 to 6
  • Butter 1/2 cup
  • Oil 2 tbsp
  • Salt to taste

Method:

  1. Pour butter, ginger garlic paste, onions and fry it well.
  2. Now add chicken and roast it.
  3. Then add green chilies paste, chopped garam masala, chopped turmeric, salt, yogurt cook it till the mutton tenders.
  4. When the chicken tenders then add green chilies, cream, simmer it.
  5. When it is simmered well then take out the dish and pour butter then serve.

Ingredients For Mixed Vegetable Korma:

  • Mix vegetable 1/2 kg
  • Ginger garlic paste 3 tbsp
  • Tomato 3
  • Brown onion 2
  • Yogurt 1 cup
  • White cumin 1 tsp
  • Red chili powder 1 tbsp
  • Whole spice  as required
  • All spice powder 1 tsp
  • Turmeric powder 1 tsp
  • Black pepper 1/2 tsp
  • Coriander powder 1/2 tsp
  • Green coriander 1/2 bunch
  • Oil 1/2 cup
  • Salt to taste

Method:

  1. Chop the onions.
  2. Pour oil and heat it add whole garam masala, make it crisp add onion paste, garlic paste and roast it.
  3. Now mix the vegetable.
  4. Then add yogurt, chopped red chilies, chopped garam masala, chopped turmeric, chopped white cumin, chopped black pepper, chopped coriander, salt, cook it well.
  5. Now pour water, cook it well add mince so that it leave oil.
  6. Dish out in add green coriander, add remaining onions make it brown garnish it then serve.

Ingredients For Mash Chawal Andrasay:

  • Rice flour 250 gm
  • White lentil 250 gm
  • Sugar 1/2 kg
  • White flour 3 cup
  • Black sesame seed 2 tbsp
  • Melon seed 1/2 cup
  • Baking powder  2 tsp
  • Egg  1
  • Oil  for fry
  • Sesame seed  as required

Method:

  1. First Keep the lentil in water for a whole night.
  2. Then filter it and make its paste.
  3. Now add sugar, water make it syrup.
  4. Then add flour rice, lentils paste, mix it well.
  5. Now add eggs, flour, baking powder knead it well, leave it for 1 hour.
  6. Then make small balls, put them in a pan, fry it.
  7. When it becomes light brown, take them out and serve.
