Crunch Kulfi, Chicken Nihari And Tasty Shami Kabab by Shireen Anwer

Ingredients For Chicken Nihari:

  • Chicken 1-1/2 kg or (8 pieces)
  • Onion 2
  • Ginger garlic 2 tbsp
  • Salt 1 tbsp
  • Chili powder 2 tbsp
  • Flour  1/2 cup
  • Nihari masala 3 tbsp
  • Ghee 1 cup
  • Coriander powder 1 tsp
  • Turmeric 1/4 tsp
  • Yogurt  1/2 cup

Ingredients For Nihari Masala:

  • Cinnamon 1 inch piece
  • Black cardamom 2
  • Green cardamom 4
  • Cloves 8
  • Black pepper whole 12
  • Fennel seeds 3 tbsp
  • Dried ginger 1/2 tbsp
  • White cumin seeds 1 tbsp
  • Mace 4 to 5 pieces
  • Nutmeg whole  half

Method:

  1. For making nihari masala: Add cinnamon, black cardamom, green cardamom, cloves, whole black pepper, fennel seeds, dried ginger, white cumin, mace, nutmeg, grind it and save it a jar.
  2. For making nihari: Pour ghee, add chopped onions, make them light golden.
  3. Now add ginger garlic paste, chicken, chopped red chilies, salt, turmeric, chopped coriander, yogurt fry it well.
  4. Then add water cover and let it cook for 15 minutes.
  5. Now add flour paste, stir it with spoon.
  6. Then add nihari masala, cover and let it cook for 30 minutes.
  7. In the end add naan, chopped ginger, lemon, green coriander, green chilies serve it well.

Ingredients For Crunch Kulfi:

  • Milk 1 kg
  • Sugar 1/2 cup
  • Fresh cream 1 cup
  • Khoya 3 tbsp
  • Corn flour 2 tbsp
  • Green cardamom powder 1/2 tsp

Ingredients For Crunch:

  • Sugar 6 ounce
  • Almond 2 ounce
  • Chocolate chips 1/2 cup

Method:

  1. First pour milk, sugar cook it with low temperature, until it remains half.
  2. Now put the saturated cornflour, khoya, cook it well when the mixture becomes thick, then take take it out and cool it.
  3. Now add fresh cream, chopped green cardamom.
  4. Then make the kulfi in ice cream machine. When it becomes set then take it out from machine.
  5. Now mix the crunch and chocolate chips.
  6. Then put the almonds on kulfi and freeze it for 12 hours.

Ingredients For Tasty Shami Kabab:

  • Boneless chicken breast 250 gm
  • Boneless chicken leg 250 gm
  • Chana ki daal 1/2 cup
  • Onion 1
  • Ginger garlic paste 1 tbsp
  • Salt 1 tsp
  • Red chili whole 15
  • White cumin seeds 1 tsp
  • Allspice 1 tsp
  • Egg 1
  • Brown onion fried 2 tbsp
  • Potato 1

Ingredients For Hara Masala:

  • Onion 1
  • Coriander leaves 3 tbsp
  • Green chilies 3
  • Mint leaves 4
  • Ginger  1 inch piece

Method:

  1. For making hara masala: Add chopped onions, chopped green coriander, green chilies, chopped mint, ginger and chop it well.
  2. For making kabab: Add chicken breast boneless, chicken boneless leg, gram lentil, big onion slices, chopped ginger garlic paste, salt, whole red chilies, chopped white cumin, potatoes boil it until it is tendered and becomes dry. Now cool it.
  3. Then add fried onions, chopped garam masala.
  4. Now take it out in a chopper, add green masala and egg, mix it well and give it shape of kabab.
  5. In the end shallow fry the kabab.
