Chicken Tikka Biryani And Kopra Pak by Shireen Anwer

Ingredients For Chicken Tikka Biryani:

  • Chicken 1 kg
  • Vinegar 4 tbsp
  • Chili powder 1 tbsp
  • All spice 1 tsp
  • Ginger garlic paste 1 tsp
  • Black pepper  1 tsp
  • Orange Color 1/2 tsp
  • Salt 1-1/2 tsp
  • Oil  1/4 cup

Ingredients For Masala:

  • Yogurt 1 cup
  • Chili powder 1 tsp
  • Turmeric 1/2 tsp
  • Coriander powder 1-1/2 tsp
  • Onion chopped 2
  • Tomatoes  5
  • Yellow color 1/4 tsp
  • Kewra water 1 tsp
  • Coriander leaf 1/2 pinch
  • Mint leaf 15
  • Green chilies 6-7
  • Oil 1 cup
  • Rice  1/2 kg

Method:

  1. First add chicken, vinegar, red chilies, chopped garam masala, chopped ginger garlic paste, chopped black pepper, orange color, salt and yogurt leave it for 30 minutes.
  2. Then pour oil add 15 and 20 minutes on low flame, cover and let it cook, until it tenders.
  3. In the end add coal and leave it for simmering.
  4. Heat the oil add masala, cook it till turns to golden brown.
  5. Then add tomatoes, along chopped red chilies, chopped turmeric, chopped coriander roast it well.
  6. Now add yogurt and roast it.
  7. Then add green coriander, mint leaves, green chilies  mix it well.
  8. For rice add salt, chopped garam masala 3/4th boil it.
  9. In the end make layer on rice, add kewra, pinch of yellow color, mix it and leave it to simmer.

Ingredients For Khopra Pak:

  • Coconut 1/2 kg
  • Semolina 1/2 cup
  • Condensed milk 1/2 tin
  • Cardamom 1-1/2 tsp
  • Caster sugar 1/2 cup
  • Food color  some
  • Almonds & pistachio  for garnishing
  • Ghee 3 tbsp

Method:

  1. Pour ghee in a pan, add semolina, roast it till the smell starts to come.
  2. After that add chopped small cardamom for roasting.
  3. Now add caster sugar, mix it well. When it is fold nicely, remove it from stove, add condensed milk.
  4. Then add chopped khopra, mix it and sprinkle some pinch of yellow or green food color.
  5. Now pour oil in a tray add mixture.
  6. Put almonds, pistachio for cooling it.
  7. After that cut it into diamond shape.
