Fried Batair, Darbari Malpora And Masala Anda Rice by Chef Zakir

Ingredients For Fried Batair:

  • Quails  6
  • Onion chopped 1
  • Garlic  4-5 cloves
  • Ginger 1 piece
  • Gram flour  3-4 tbsp
  • Salt  to taste
  • Cumin seeds crushed  1 tsp
  • All spice powder 1 tsp
  • Dry mango powder 1 tsp
  • Chili powder 1 tsp
  • Coriander powder 1 tsp
  • Baking powder  1/2 tsp
  • Oil  for fry

Method:

  1. First add onions, garlic, ginger make its paste with water.
  2. Now take out the paste in a bowl, add cumin, chopped garam masala, chopped raw dry mango, chopped red chilies, baking powder, salt mix it well.
  3. Then coat the portions with masala, add gram flour mix it well.
  4. Pour oil in a pan, deep fry it.
  5. When they turn to golden color sprinkle lemon juice on it then serve.

Ingredients For Darbari Malpora:

  • Rice flour 50 gm
  • Flour 50 gm
  • Caster sugar 50 gm
  • Nutmeg powder 1/4 tsp
  • Soda bi carb 1/4 tsp
  • Orange skin 1 tbsp
  • Almond and pistachio  25 gm
  • Cashew nuts chopped 25 gm
  • Milk 125 ml
  • Oil  for fry
  • Butter 1 tbsp
  • Raisin 25 gm
  • Fresh cream 200 ml
  • Rose water 1 tbsp

Method:

  1. First add flour, rice flour, sugar, chopped nutmeg, soda, orange skin mix it well.
  2. Then add milk, mix it till the paste becomes thick.
  3. Now pour oil in a pan, shallow fry it from both sides, when all malpora becomes ready then keep it on aside.

Ingredients For Masalay Anda Rice:

  • Desiccated coconut 2 tbsp
  • Boiled egg 3-4
  • Turmeric 1 tsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Chili powder 1 tsp
  • All spice powder 1/2 tsp
  • Onion chopped 1
  • Oil 1/4 cup
  • Tomato puree 3 tbsp
  • Salt to taste
  • Coriander leaves 1/4 bunch
  • Green chilies chopped 3-4
  • Boiled rice  300 gm

Method:

  1. First pour oil in a pan add coconut.
  2. When it changes its color then add chopped onions, chopped green chilies, tomato puree.
  3. Along chopped red chilies, chopped coriander, chopped cumin, chopped garam masala, turmeric, salt mix it well.
  4. Now add chopped and boiled eggs, boiled rice, chopped green coriander, heat it high mix it well then serve it hot.
