Doughnuts, Frozen Salad And Chutney Prawns by Zarnak Sidhwa

Ingredients For Doughnuts:

  • Flour 450 gm
  • Yeast 2 tbsp
  • Butter 2 tbsp
  • Caster sugar 75 gm
  • Eggs beaten 2
  • Warm milk 6 tbsp
  • Warm water 6 tbsp
  • Oil  to deep fry

Ingredients For Filling:

  • Strawberry jam   As required

Ingredients For Coating:

  • Caster sugar 4 oz
  • Ground cinnamon  2 tsp

Method:

  1. Mix flour, yeast, butter, sugar, warm milk and warm water and kneed to a smooth dough.
  2. Till elastic and smooth, return to bowl and cover with cling and let rise till doubled in size, kneed again after an hour and divide into equal pieces, shape into a ball and flatten add a tbsp of jam in each ball and gather the edges together and pinch firmly to seal.
  3. Place well apart on a greased baking tray and cover with oiled film and let prove again for 30 more minutes.
  4. Heat oil and deep fry till golden.
  5. Drain well and mix sugar and cinnamon in a bowl and toss the doughnuts in them.
  6. Serve on the day of making.

Ingredients For  Frozen Salad:

  • Gelatin 2 tbsp
  • Peas boiled 1/2 cup
  • Cucumber 1
  • Tomato  1
  • Boiled eggs 2
  • Apple 1
  • Potato 1
  • Carrot  1
  • Cream 1 cup
  • Pineapple 1/4 cup
  • Mayonnaise 1 cup
  • Salt and pepper to taste
  • Sugar 1 tsp
  • Ice berg or lettuce  to serve
  • Olives  to garnish

Method:

  1. Dissolve gelatin with 1/4 cup water.
  2. Once spongy with all ingredients well.
  3. Moisten with water or grease a mould and spoon in the mixture, freeze till set.
  4. When set, overturn over a bed of lettuce or ice burg.
  5. Garnish with olives and serve

Ingredients For Chutney Prawns:

  • Large prawns 1 kg
  • Breadcrumbs 1 cup
  • Egg 1
  • Coriander 1 bunch
  • Mint  1 bunch
  • Coconut 4 tbsp
  • Green chilies 3-4
  • Lemons( juice) 2
  • Cumin seeds 1/2 tsp
  • Sugar 1 tbsp
  • Salt 1/2 tsp
  • Oil  to fry

Method:

  1. Grind coriander, mint, green chilies, coconut, cumin seeds, lemon juice, sugar and salt together.
  2. Make a cut in the prawns and flatten them slightly.
  3. Apply chutney to the prawns and then coat each in breadcrumbs, refrigerate for a while.
  4. Dip in egg and fry till crispy.
