Ingredients For Triple Chocolate Parfaits:
Dark chocolate 9 oz
White chocolate 9 oz
Milk chocolate 9 oz
Cream 560 ml
Egg whites 9
Chocolate, grated to decorate
Method:
Melt each chocolate on a double boiler in separate bowls, set aside, when cold divide the whipped cream in thirds and add in the chocolates separately.
In a separate clean bowl whisk the egg white till stiff but not dry.
Fold 1/3 of the whites a little at a time in each chocolate mixture.
Grease very lightly a spring form tin with oil or make the parfaits in glasses.
Pour dark chocolate mousse in a single layer cool little in fridge, then top with the chocolate mixture cool and then the milk chocolate freeze till set and serve directly from the glasses or slice in wedges from the tin.
Top with grated chocolate before serving.
Ingredients For Shortbread Fingers:
Flour 4 oz
Almonds ground 1 oz
Semolina 1 oz
Butter 4 oz
Caster sugar 2 oz
Almond essence 1/2 tsp
Flaked almonds 1 oz
Caster sugar to dust
Method:
Mix flour, ground almonds and semolina in a bowl, add butter, sugar and almonds essence, mix together till mixture resembles breadcrumbs, knead till smooth.
Press dough in a greased tin and level the surface with a spoon.
Sprinkle flaked almonds.
Bake at 160 degrees C for 30 minutes or till pale golden.
Mark into fingers and sprinkle caster sugar and let cool in tin, lift out carefully when cold and store in air tight tin.
Ingredients For Chicken Jalfrezi:
Chicken 1 kg
Onion 4
Onions 2
Tomatoes 6
Capsicum 1
Ginger garlic paste 1 tbsp
Turmeric powder 1/4 tsp
Garam masala powder 1/4 tsp
Salt 1 tsp
Coriander powder 1 tsp
Oil 2 tbsp
Method:
Heat oil, add sliced onions, saute, add ginger garlic paste, turmeric, coriander and half the tomatoes, once tomatoes are done, add in chicken and saute, add salt, let cook till chicken is done.
In another pan heat very little oil add tomatoes, capsicum. diced onions, sprinkle garam masala, let saute very little time, add on the cooked chicken and mix and serve with rice.
