Mutton Shorba And Rice Soup by Chef Gulzar

Ingredients For Rice Soup:

  • Hard boiled rice 1 cup
  • Boiled green peas 1/2 cup
  • Boiled white chickpeas 1/2 cup
  • Boiled red kidney beans  1/2 cup
  • Chopped garlic  3 to 4 cloves
  • Olive oil  2-3 tbsp
  • Salt  to taste
  • Parsley/ coriander for garnish

For Stock:

  • Chicken  1/2 kg
  • Chopped onion  2
  • Ginger garlic paste 1 tbsp
  • Gul khatmi  10 gm
  • Crushed black pepper 1/2 tsp
  • Crushed red chili  1 tsp
  • Olive oil  2 to 3 tbsp
  • Salt to taste

Method:

For making stock:

  1. Pour oil in a pan, add chicken, onion, ginger garlic paste, roast it well.
  2. Now add chopped black pepper, chopped red chilies, gul khatmi, salt cook it for 5 minutes.
  3. Then pour water, let it cook on low temperature.
  4. Stock is ready.
  5. Then pour oil in a pan, add garlic cloves, fry it.
  6. Then add peas, white peas, red beans, rice, roast it well.
  7. Then add soup, cook it for 5 to 10.
  8. Now put it into serving dish, add parsley or green coriander for garnishing.

  • Mutton 1/2 kg
  • Onion paste 1/2 cup
  • Garlic paste 1 tbsp
  • Almond paste 1/2 cup
  • Crushed black pepper 1 tsp
  • Gul khatmi 10 gm
  • White pepper  1 tsp
  • Turmeric powder 1/2 tsp
  • Cinnamon  2 sticks
  • Clove 4 to 5
  • Small cardamom 4 to 5
  • Oil  4 tbsp
  • Salt to taste
  • Chopped almond for garnish
