Shahi Korma Biryani, Dahi Murg Kabab And Achari Dahi Bhindhi by Zubaida Tariq

Ingredients For Shahi Qorma Biryani:

  • Chicken 1
  • Yogurt 1 cup
  • Chopped onion 4
  • Degi Red chilies 4
  • Lemons 2
  • Coriander seeds 2 tbsp
  • Small cardamom  6
  • Black cumin  1 tsp
  • Ginger garlic as required
  • Salt  to taste
  • All spice powder 1 tsp
  • Oil/ clarified butter 1 cup
  • Fresh milk  1 cup
  • Yellow food color  as required
  • Saffron  a pinch

To boil the rice:

  • Rice  2 -2 1/2 cups
  • Mint leaves 1 bunch
  • Green chilies  4
  • Small cardamom  3
  • All spice powder  as required
  • Black cumin  1 tsp
  • Salt  to taste

Method:

  1. First wash the rice, keep them in water.
  2. Then change its water, add mint, green chilies, small cardamom, whole garam masala, black cumin, salt and boil it well.
  3. Now add red chilies, water few drops of white vinegar boil it well.
  4. Then add whole coriander, red chilies and sugar.
  5. Now pour oil add chopped onions make it golden brown take it out.
  6. Then add onions, yogurt mix it.
  7. Along red chatni, ginger garlic paste and garam masala.
  8. After that add oil and chicken pieces dry its water, then add yogurt, salt roast it well add hot water.
  9. When the water dries then add small cardamom, black cumin, chop it well simmer it for 10 minutes.
  10. Now grease the oil in a pan, make half layer of rice then mince.
  11. After that pour lemon juice, rice layer.
  12. Then put fried onions on it.
  13. Pour milk, pinch of yellow color saffron.
  14. After that put lemon juice, cover and simmer it, after some minutes place it on a frying pan.
  15. When the steam comes up then take out the shahi biryani in a dish serve it by garnishing mint and fried onions.


Ingredients For Dai Murg Kabab:

  • Chicken boneless 1/2 kg
  • Yogurt  1/2 kg
  • Ginger paste 2 tbsp
  • Salt  to taste
  • Green chilies  8
  • Red chili flakes 1 tbsp
  • Lemons  4
  • Black pepper  1 tsp
  • Bihari kabab masala  2 tbsp
  • Raw papaya paste 1 tbsp
  • Clarified  1 cup

Method:

  1. First take out the boneless chicken, yogurt, papaya paste, chopped green chilies, salt, lemon juice, ginger garlic paste, bihari kabab masala, chopped black pepper, chopped red chilies, keep it for a while, tikka masala is absorb well.
  2. Now pour ghee, mix it well.
  3. When the water dries then add ghee simmer it well.
  4. You can also give coal steam.


Ingredients For Achari Dahi Bhindhi:

  • Lady finger 1/2 kg
  • Yogurt 1 cup
  • Mustard oil 1 cup
  • Green chilies  6
  • Curry leaves  few
  • Fenugreek seeds  few seeds
  • Tamarind paste  1/2 cup
  • Tamarind 1 tsp
  • White cumin seeds 1 tsp
  • Fennel seeds 1 tsp
  • Nigella seeds 1 tsp
  • Mustard seeds 1 tsp
  • Red chili flakes 1 tbsp
  • Coriander seeds 1/2 tbsp
  • Salt  to taste
