Portugali Grilled Chicken, Daal Maharani And Bengali Bhuni Machli By Chef Zakir

Ingredients For Portugali Grilled Chicken:

  • Chicken with skin half
  • Onion  1
  • Dry red chilies 6-7
  • Lemon  half
  • Lemon juice 2 tbsp
  • Turmeric 1/2 tsp
  • Water 1 cup
  • Dry ginger powder 1/2 tsp
  • Garlic  2-3
  • Ginger  1
  • Salt  to taste
  • Black pepper powder 1/2 tsp
  • Oil  3-4 tbsp

Method:

  1. First pour water add chopped onions, garlic, ginger, lemon, dry red chili, turmeric, boil it well.
  2. When it is boiled then make it soft blend it well.
  3. Keep it mind that water should not be much, dry its water.
  4. When it becomes soft then add salt and chopped black pepper mix it well.
  5. Now press chicken with hammer make it thick, keep it mind that the breast and legs.
  6. Then marinate the chicken well.
  7. Now add coal in chicken pieces then grill it.
  8. Now pour oil add lemon juice, mix it well.
  9. Now brush the mixture on chicken on both sides.
  10. When all sides becomes dry then becomes golden color, then serve it with bread or rice.

Ingredients For Daal Maharani:

  • White lentils  125 gm
  • Yellow lentils  125 gm
  • Whole green lentils 50 gm
  • Water  1 -1 1/2 glass
  • Ginger paste 1 tbsp
  • Salt  to taste
  • Chili powder  1 tbsp
  • Coriander powder 1 tbsp
  • All spice powder  1 tsp
  • Lemon juice  1-1 1/2 tbsp
  • Fresh cream 125 ml
  • Onion  1
  • Oil  1/4 cup
  • Butter  2 tbsp
  • Cumin seeds 1 tsp
  • Garlic 4-5
  • Coriander leaves  2 tbsp
  • Cumin seeds 1 tsp
  • Garlic  4-5
  • Coriander leaves  2 tbsp

Method:

  1. First add white lentils, yellow lentils, whole green lentils wash them and keep them in water for 30 to 45 minutes.
  2. Now put the lentils in water, add salt, ginger garlic paste, chopped coriander, chopped garam masala, cook it on low temperature.
  3. When the lentils are tendered well then add fresh cream.
  4. Add salt, lemon juice cook it on low temperature.
  5. Then pour oil, add butter, onion slices, garlic cloves.
  6. When it becomes golden color add whole cumin cook it for a few minutes.
  7. In the end add chopped green coriander take it out in dish then serve.

Ingredients For Bengali Bhuni Machli:


  • Fish  1/2 kg
  • Onion  1
  • Oil  3 tbsp
  • All spice powder 1 tsp
  • Green chilies 2-3
  • Ginger 1
  • Yogurt  250 gm
  • Salt  to taste
  • Sugar  1 tsp
  • Coriander  2 tbsp

Method:

  1. Pour oil in a pan add chopped onions for frying.
  2. When the onions becomes soft then add green chilies, ginger garlic, chopped garam masala fry it well for 1 to 2 minutes.
  3. Then add yogurt, salt, cook it well make it thick.
  4. Then add fish pieces, cook it from both sides.
  5. Add some sugar, salt and chopped green coriander mix it, take it out and serve.
