Murgh Mutton Malai, White Chocolate Trifle And BBQ Haryali Chicken Boti by Shireen Anwer

Ingredients For Mughlai Mutton Malai:

  • Mutton 1/2 kg
  • Yogurt 1 cup
  • Coriander powder 2 tsp
  • Salt  1 tsp
  • Allspice 1 tsp
  • Green cardamom grinded  1/4 tsp
  • Lemon juice 1 tbsp
  • Roasted and crushed cumin 1 tsp
  • Chili powder 2 tsp
  • Ginger garlic  1 tbsp
  • Brown onion crushed 3 tbsp
  • Green chili chopped 3
  • Cashew nut grinded 6
  • Malai 2 tbsp
  • Kewra water 1 tsp
  • Saffron  1 pinch
  • Mint leaves  as required
  • Oil  1/2 cup

Method:

  1. First put the yogurt, chopped coriander, salt, chopped garam masala, chopped green coriander, lemon juice, chopped and crushed cumin, chopped red chilies, ginger garlic paste, chopped and crushed onions, chopped green chilies, malai in a chicken for marination, keep it for an hour.
  2. Now pour oil put the marinated mutton, cover and let it keep on simmer, until the onions becomes soft.
  3. Then add chopped walnuts, kewra, saffron, mint simmer it, until the oil comes up.

Ingredients For White Chocolate Trifle:

  • Milk 4 cup
  • Caster sugar 1/2 cup
  • Corn flour 3 tbsp
  • Vanilla essence 1 tsp
  • White chocolate 4 ounce
  • Fresh cream whipped  4 ounce
  • Plain cake 1 pound
  • Strawberries chopped 2 cup
  • Fruit syrup 1/2 cup
  • Pistachio to decorate
  • Milk Chocolate  to decorate

Method:

  1. First pour milk, add caster sugar boil it.
  2. Now add corn flour, stir it, until the custard becomes thick.
  3. Now take it out, add white chocolate, mix it well.
  4. Then cool the mixture, add beaten cream then fold it.
  5. Now keep stir it after few minutes, cut the 1 pound cake into small cubes.
  6. Then place cake in a bowl, moist it with fruit syrup.
  7. Put strawberry white chocolate custard.
  8. Then make a layer, cover and freeze it for 2 hours.
  9. In the end add beaten cream, milk chocolate, put pistachio for garnishing then serve it.

Ingredients For BBQ Haryali Chicken Boti:

  • Chicken 1 kg 16 pieces
  • Ginger garlic paste 1 tbsp
  • White vinegar 3 tbsp
  • Green chilies 8
  • Coriander leaves 3 tbsp
  • Mint leaves  10
  • Salt 1 1/2 tsp
  • Onion 1
  • Oil 1/4 cup
  • Gram flour 2 tbsp
  • All spice 1 tsp
  • Yogurt  1/4 cup

Method:

  1. First add ginger garlic paste,white vinegar, salt in chicken marinate it for 30 minutes.
  2. Now add saute flour, take it out in a bowl, chopped green chilies, green coriander, mint leaves. yogurt, egg white, lemon juice, fenugreek leaves, garam masala.
  3. Then add chicken and marinate it for 2 hours.
  4. After that do the BBQ or bake it.
  5. Now give steam of coals, serve it with chutney.
