Ingredients For Achari Daalcha:
Meat 1/2 kg
Gram lentil 1 cup
Masoor lentil 1 cup
Ginger garlic paste 2 tsp
Chopped tomatoes 250 gm
Tamarind juice 1/2 cup
Onion 1
Curry leaves 10
Green coriander 1/2 bunch
Green chilies 6
Long red chilies 6
Red chili powder 2 tsp
Turmeric 1 tsp
Salt 1 tsp
Black cumin seeds 1 tsp
Small cardamom 4
Clove 2
Cinnamon 1 piece
Gourd 1/2 kg
Oil 1/2 cup
Mustard seeds 1 tsp
Black onion seeds 1 tsp
Fennel seeds 1 tsp
Fenugreek seed 1 tsp
Method:
First put the mutton in a clay pot, add ginger garlic paste, salt, chopped turmeric, chopped red chilies, small cardamom, cinnamon, black cumin, water cover and let it cook.
When the mutton tenders then add lentils, pour water and keep its temperature low.
When all the lentils are tendered then add kalonji, green chilies, tamarind juice, turn off the stove.
Pour oil in a different pan, add red chilies, curry leaves, mustard seeds, kalonji, fennel seeds, fenugreek seeds and leave it on bhagar.
Ingredients For Keri Ki Chutney:
Raw mangoes 2
Green chilies 6
Green coriander 1/2 bunch
Mint leaves 1/2 bunch
Garlic cloves 10
Lemon juice 1/2 cup
Salt 1/2 tsp
Cumin seeds 2 tsp
Method:
First cut the raw mangoes, make its small pieces.
Now blend the raw mangoes, add green chilies, chopped green coriander, mint, garlic cloves, lemon juice, salt, cumin blend it well.
Keri chutney is ready
Ingredients For Khatta Meetha Achar:
Raw mangoes 1/2 kg
Mustard oil 1 kg
Lemon 250 gm
Carrot 250 gm
Peeled Garlic 125 gm
Jaggery 50 gm
Green chilies 100 gm
Mustard seeds 1 tsp
Black onion seeds 1 tsp
Fenugreek seed 1 tsp
Fennel seeds 1 tsp
Red chili powder 1 tbsp
Turmeric 1 tbsp
Salt 1 tbsp
Method:
First add lemon, green chilies, carrots, garlic wash it well, cut and make it dry.
Now add turmeric, salt put it in a filter.
When the water comes out of vegetables, make it dry under fan air.
After that pour olive oil let it cook.
Along mustard seeds, kalonji, fenugreek seeds, jaggery, keri, fennel seeds crush it thick.
Then add all the masala in vegetables, tie it with cloth and keep it in sunlight for 1 week.
Delicious khatta meetha achar is ready.
