Drumstick Kabab Wali, Meat Balls In Spicy Sauce And Sooji Upma by Chef Zakir

Ingredients For Drumstick Kabab Wali:

  • Chicken thigh piece  6
  • Ginger garlic paste 2 tbsp
  • Papaya paste  2 tbsp
  • Tomato paste 2 tbsp
  • Yogurt  125 gm
  • Coriander leaves  1/4 bunch
  • Fresh cream  4 tbsp
  • Lemon juice  2 tbsp
  • Chili powder  1 tbsp
  • Turmeric  1 tsp
  • Salt  to taste
  • Aluminum foil as required
  • Sesame seeds  2 tbsp

Ingredients For Sooji Upma:

  • Onion chopped  1
  • Green chilies chopped 3-4
  • Gram lentils boiled 25 gm
  • White lentils boiled 25 gm
  • Ghee  2 tbsp
  • Mustard seeds  1 tbsp
  • Cashew nuts chopped 25 gm
  • Semolina   250 gm
  • Salt  to taste
  • Water  1-1 1/2 glass

Method:

  1. First pour ghee, add onions cook it till it becomes soft.
  2. Then add green chilies, mustard seeds, chopped walnuts, boiled white lentils. boiled gram lentils fry it till its color changes lightly.
  3. Now cook it on low temperature , pour water until it becomes thick.
  4. When it becomes ready then serve it with rice or chapati.

Ingredients For Meat Balls In Spicy Sauce:

  • Potatoes boiled mashed 2
  • Beef mince 300 gm
  • Onion  1
  • Coriander leaves 1/4 bunch
  • Celery stick chopped 1
  • Garlic chopped 3-4
  • Butter  2 tbsp
  • Oil  2 tbsp
  • Salt  to taste
  • Black pepper powder 1/2 tsp

For Sauce:

  • Oil 2 tbsp
  • Onion chopped 1
  • Brown sugar 1 tsp
  • Tomatoes boiled  3
  • Green chilies chopped 2-3
  • Chili powder  1 tsp
  • Chicken stock  1 cup
  • Roasted flour 2 tbsp
  • Cheddar cheese  50 gm
  • Crushed red pepper 1/2 tsp

Method:

  1. First add mince in a chopper, boiled mashed potatoes, onions, chopped green coriander, chopped garlic, chopped celery stick, salt, chopped black pepper mix it well and take it out in a bowl and make it small balls.
  2. Now add butter, pour oil add ready balls shallow fry it well until its color changes.
  3. During this pour oil in another pan, add chopped onions, chopped green chilies, fry it for 1 to 2 minutes.
  4. Then add brown sugar, boiled tomatoes, chopped red chilies, chicken stew, salt cover and let it cook on simmer.
  5. Remove it cover for 5 to 6 minutes, add roasted flour, make the gravy thick.
  6. Then mix the fried balls and cheddar cheese mix it well, take it out in a dish garnish it with green coriander then serve.
