Baati Seera And Gattay Ki Sabzi by Zarnak Sidhwa

Ingredients For Baati Seera:

  • Cracked wheat 1/2 kg
  • Jaggery  1/2 kg
  • Oil 2 cups
  • Green cardamom 2
  • Water  4 cup
  • Salt  1 pinch

Method:

  1. In a pan put together water and jaggery, let it cook until jaggery is dissolved, strain the syrup and keep it aside.
  2. Heat oil in a wok, add in 2 pods of green cardamoms, saute for a while, now add 1/2 kg cracked wheat to it and fry very well till its color turns to golden brown.
  3. Then add jaggery syrup to it, Cook till water dries.
  4. Lastly simmer on low flame for a few minutes.
  5. Then dish it out and serve.

Ingredients Gattay Ki Sabzi:

  • Gram flour  250 gm
  • Black pepper  a little
  • Pomegranate seeds a little
  • Green chilies 2
  • Salt  to taste
  • Oil  3-4 tbsp
  • Water  as required

For Gravy:

  • Onion chopped  1 medium
  • Tomato chopped  1 medium
  • Chili powder  as required
  • Salt  to taste
  • Oil  1/4 cup

Method:

  1. In a bowl mix together gram flour, coarsely black pepper, pomegranate seeds, chopped green chilies, salt and oil.
  2. Now mix well and knead to dough with water as required.
  3. Now roll the dough on a flat surface, cut into thick strips.
  4. Add all the strips to boiling water and cook for 2 minutes.
  5. Remove all the cooked strips in strainer, then cut into small cubes and keep aside.
  6. For gravy heat 1/2 cup oil in a pan, add in 1 chopped onion and saute till golden brown.
  7. Now add chopped tomato, chili powder and salt to taste.
  8. Fry well till tomatoes are tender fry well and mash coarsely.
  9. Add in water as required, till it comes to a boil.
  10. Lastly add cooked gattaya, mix gently.
  11. Simmer for a few minutes, then dish it out and serve hot.
