Mutton Dalcha, Arabic Rice And Cullen Prawn by Chef Zakir

Ingredients For Mutton Dalcha:

  • Mutton 1/2 kg
  • Yellow green grams 50 gm
  • Split red grams 50 gm
  • Bengal grams 100 gm
  • Tomatoes 2
  • Onions  2
  • Yogurt  125 gm
  • Garlic 8 cloves
  • Coriander 1/4 bunch
  • Oil  1/2 cup
  • Cumin seeds  1 tbsp
  • Turmeric  1 tbsp
  • All spice powder  1 tbsp
  • Cumin seeds powder 1 tbsp
  • Ginger garlic paste  2 tbsp
  • Red chili powder  2 tbsp
  • Water  as required
  • Salt to taste

Method:

  1. First take a yellow green grams, split red green and bengal gram keep them into water.
  2. Now take a pan, pour oil heat it add ginger garlic paste,mutton then roast it.
  3. After that add all 3 lentils, along tomatoes, onion, chopped red chilies, turmeric, chopped garam masala, yogurt, chopped cumin, salt, green coriander roast it for 2 to 4 minutes.
  4. Then add water cover and let it cook.
  5. When the mutton tenders then add garlic cloves, pour oil add whole cumin, give it tarka.
  6. Delicious mutton dalcha is ready.

Ingredients For Arabic Rice:

  • Almonds  25 gm
  • Pistachio  25 gm
  • Jaggery  50 gm
  • Dried dates  100 gm
  • Dried apricots 100 gm
  • Rice 300 gm
  • Olive oil  1/2 cup
  • Salt  to taste

Method:

  1. First boil the rice.
  2. After that boil the dried dates and take out its seeds.
  3. Along apricot, almonds, pistachio boil it.
  4. Now pour olive oil add dry dates, almonds, pistachio saute it and add rice.
  5. After that add salt, simmer it for 4 to 5 minutes.
  6. Arabic rice is ready.

Ingredients For Cullen Prawn:

  • Prawns  1/2 kg
  • Butter  2-3 tbsp
  • Onion  1 medium
  • Milk  300 ml
  • Potatoes boiled  2
  • Fresh cream  1/2 cup
  • Parsley Chopped  1/4 bunch
  • Salt  to taste
  • Black pepper powder  1/4 tsp
  • Garlic chopped  2-3 cloves
  • Flour roasted  2 tbsp
  • Red capsicum 1

Method:

  1. First pour ghee in a pan, add garlic cloves, cook it well, add prawns, fry it for 1 to 2 minutes take it out and keep it on a side.
  2. Now put onions, small capsicum, roast it for 1 to 2 minute.
  3. Then add small boiled potatoes milk.
  4. Then add fresh cream, salt, chopped black pepper, chopped parsley, fry it add prawns mix it well and take it out in a dish then serve.
