Vegetable Karahi, Chatpatay Mutton Balls And Zeera Pepper Chicken by Zubaida Tariq

Ingredients For Vegetable Karahi:

  • Potatoes 2
  • Chopped Carrots 2
  • Chopped capsicum 2
  • Lemons 4
  • Tomatoes  4
  • Green chilies  8
  • Peas   1 cup
  • Oil  1 cup
  • Green coriander 1 bunch
  • Fenugreek leaves 2 bunches
  • Cauliflower  1
  • Black pepper  1 tsp
  • Crushed cumin  1 tsp
  • Ginger garlic paste  1 tbsp
  • Red chili powder 1 tbsp
  • Coriander seeds  1 tbsp
  • Mustard powder 1 tbsp
  • Butter  1 tbsp
  • Chopped ginger 2 tbsp
  • Salt  to taste

Method:

  1. Pour oil add tomatoes piece.
  2. Along red chilies, ginger garlic paste, salt add tomatoes dry its water.
  3. Now add oil heat it well, take it out when it is fried.
  4. Then take out the cabbage when it is fried.
  5. Fry Peeled peas, capsicum, chopped carrots.
  6. When the tomatoes water dries then add fried vegetables, chopped soya, chopped and crushed white cumin, whole coriander seeds, black pepper, chopped and crushed mustard powder roast it well.
  7. When it is roasted then add lemon juice, green chilies, chopped green coriander, add butter.
  8. In the end simmer it for 5 minutes and then serve it with chapati.

Ingredients For Zeera Pepper Chicken:

  • Chicken breast 4
  • Lemons  4
  • Brown sugar  1 tbsp
  • Ginger garlic paste  1 tbsp
  • Black pepper  1/2 tbsp
  • White cumin  1/2 tbsp
  • Soya sauce  2 tbsp
  • White vinegar  2 tbsp
  • Oil  as required
  • Salt to taste

Method:

  1. Crush the chicken breast fillet nicely.
  2. Now add soya sauce, lemon juice, white vinegar, ginger garlic paste, salt, chopped white cumin, brown sugar mix it well.
  3. Then paste it on fillet, and keep it on a side for  few minute.

Ingredients For Chatpatay Mutton Balls:

  • Mutton mince  1/2 kg
  • Bread slice  2
  • Cottage cheese 1 packet
  • Salt  to taste
  • Chicken cube flour 1 tbsp
  • Red chili flakes  1 tbsp
  • Black pepper  1 tsp
  • White vinegar 1 tbsp
  • Green chilies 8
  • Bread crumbs  1 packet
  • Oil  to  fry

Method:

  1. First add mince, salt in a pan, dry its water.
  2. Now add bread slices, chop it well.
  3. Then add cottage cheese, floured chicken cubes, red chilies, chopped black pepper, green chilies, bread crumbs mix it well.
  4. After that knead it with hand make small balls, deep fry them in hot oil and make them golden brown.
  5. Then spread it on tissue paper, so that oil absorbs.
  6. In the end serve it with tomato ketchup.
