Baqar Khani Ka Meetha, Special Nali Nihari And Gulzar Special Nihari Masala by Chef Gulzar

Ingredients For Gulzar Special Nihari:

  • Tartary  1 tsp
  • Red chilies  50 gm
  • Red chilies (fresh)  50 gm
  • White cumin seeds  6 tbsp
  • Black cumin seeds  2 tbsp
  • Fennel seeds  2 tbsp
  • Cardamom  1 tbsp
  • Star anise  2
  • Black peppercorn 1 tbsp
  • Nutmeg  2

Method:

  1. First pour oil add tartary, whole red chilies, big capsicum, whole red chilies, white cumin, whole black cumin, fennel. big cardamom, star anise, chopped black pepper, nutmeg mace then roast it.
  2. Now add roasted masala, blend it well.
  3. Gulzar special nihari masala is ready.

Ingredients For Special Nali Masala:

  • Beef  1 kg
  • Bone marrow  1/2 kg
  • Ginger garlic paste 2 tbsp
  • Flour  1 cup
  • Nihari masala 3 tbsp
  • Onion 2
  • Oil  as required
  • Salt  to taste
  • Ginger as required
  • Green coriander  as required
  • Green chilies  as required
  • Lemons  as required

Method:

  1. First pour water in a pan, add bone marrow, beef, ginger garlic paste, cook it for 3 to 4 hours.
  2. Now filter it and separate the stew and waste the bone.
  3. Then add flour roast it.
  4. Pour oil in a pan, add big onions make it brown.
  5. Now add ginger, garlic, mutton roast it well.
  6. After that put special nihari masala, roast it for 1 to 2 minute then add stew.
  7. When the mutton tenders then add flour, with water mix it well.
  8. When the gravy becomes thick, then add nali.
  9. Now add onions for baghar, green chilies, green coriander, lemon juice, ginger for garnish then serve.

Ingredients For Baqar Khani Ka Meetha:

  • Baqar khani 7 to 8
  • Milk 2 cup
  • Sugar  6 tbsp
  • Eggs  3
  • Cream  1 cup
  • Cinnamon powder  1 pinch
  • Rose powder  2 tsp
  • lemon juice  2 tbsp
  • Chopped almond  for garnish
  • Chopped pistachio  for garnish

Method:

  1. Pour oil in a pan, add sugar mix it then cook it well.
  2. Now add egg mix it.
  3. Then add cinnamon powder, rose water, chopped almonds, chopped pistachio, lemon juice, cream mix it well and remove it from stove.
  4. Put some ready baqar khani, remaining almonds, pistachio.
  5. Now place it in preheated oven for 200 degree C for baking it for half an hour to make it golden.
  6. In the end take it out and then serve.
