Ingredients For Zafarani Sooji Ka Halwa:
Semolina 250 gm
Ghee 250 gm
Sugar 250 gm
Water 500 gm
Green cardamom 6
Almonds sliced 2 tbsp each
Sliced pistachios 2 tbsp
Zafaran 1/2 cup
Milk 2 tbsp
Arq-e-gulab 2 tbsp
Method:
Pour ghee in a pan, add green cardamom.
Then add semolina, fry it for 30 minutes, until it becomes golden brown.
Now remove it from stove.
Then add sugar, pour hot water, stir it well. Then place it on stove again, until the water dries.
Then cover it and simmer it on pan.
Add Argh-e-ghulab.
Then add almond slices, pistachios garnish it then serve.
Ingredients For Bihari Keema:
Mince 1/2 kg
Yogurt 1 cup
Poppy seeds 1 tbsp
Desiccated coconut 1 tbsp
Button red chilies 12
Cloves 3
Green cardamom 3
Cinnamon sticks 2
Ginger garlic paste 1 tbsp
Salt 1 tsp
Nutmeg grinded 1/4 tsp
Mace grinded 1/4 tsp
Brown onion grinded 3 tsp
Allspice 1 tsp
Raw papaya 1 tbsp
Ghee/ oil 1/2 cup
Method:
First add poppy seeds, coconut powder, red chilies, cloves, cinnamon, green cardamom roast it well.
Then add mince, chopped papaya, ginger garlic paste for marinating it for 2 hours.
Now pour oil add ghee, add roasted masala, water, salt, fry it for few minutes.
Now add the marinated mince, then add yogurt, cover and let it cook, until the water dries.
After that add fried onions, chopped garam masala, simmer it with coal.
Now add green coriander, green chilies for garnish serve it hot with kashmiri paratha.
Ingredients For Chicken & Rice Kabab:
Mashed chicken 2 cups
Gram flour roasted 4 tbsp
Egg 1
Boiled and mashed rice 1/2 cup
Green chilies chopped 6
Salt 1/2 tsp
Cumin seeds 1 tsp
Chat masala 1 tsp
Coriander leaves 4 tbsp
Fresh bread crumbs 4 tbsp
Ginger garlic 1 tsp
Crushed red pepper 1 tsp
Oil 2 tbsp
Cheddar cheese 4 tbsp
Method:
First add boiled mashed chicken, roasted flour, egg, boiled mashed rice, chopped green chilies, salt, cumin , chaat masala, green coriander, fresh bread crumbs, ginger garlic, chopped red chilies, oil and cheddar cheese mix it well.
Now add bun kababs pour oil deep fry them and serve them hot.
