Kofta Biryani, Peshawari Vegetable Kabab And Fruit Mocktail by Zubaida Tariq

Ingredients For Kofta biryani:

For Meat Balls:

  • Beef/ chicken mince  1/2 kg
  • Bread slices 2
  • Lemons  2
  • Chopped onion 3
  • Black peppercorn 4
  • Green chilies  4
  • Small cardamom   6
  • Yellow food color some
  • Oil  1 cup
  • Fresh milk  1 cup
  • Rice  2 cups
  • Yogurt  1/2 cup
  • Mint leaves  1/2 bunch
  • Cumin 1 tsp
  • Turmeric  1 tsp
  • All spice powder 1 tsp
  • Red chili  1 tbsp
  • Coriander powder 1 tbsp
  • Chick peas  1 tbsp
  • Poppy seeds  1 tbsp
  • Ginger garlic paste 1 tbsp
  • Salt  to taste

For Gravy:

  • Mint leaves  1/2 bunch
  • Chopped green chilies  4

Method:

  1. First add mutton mince, roasted peas, poppy seeds, white cumin add whole black pepper.
  2. Then add bread slices on mince.
  3. Now add mince, chopped garam masala, chop it into grinder.
  4. Then add salt, green chilies, chopped mint make its small koftas shallow fry them in hot oil.
  5. Then pour oil add chopped onions make them golden brown and make it crispy.
  6. Now make it crispy, add yogurt, along red chilies, chopped coriander, turmeric, salt pour oil roast it lightly. Then add fried koftas and simmer it for 5 minute.
  7. After that add rice and boil it. Along salt, green chilies, mint, small cardamom, boil it 2/4th.
  8. Then add rice, waste its water, pour some water on its base, make layer of rice.
  9. After that place it separately with kofta masala, spread the masala on rice.
  10. Now add some mint, green chilies.
  11. Then make half layer of rice, pour fresh milk add some pinch of yellow color.
  12. After that add lemon juice, add koftas on its top and simmer it.
  13. When the steam starts to comes up it means the biryani is ready.

Ingredients For Peshawari Vegetable Kabab:

  • Boiled potatoes 1/2 kg
  • Grated carrots  2
  • Chopped soya 2 bunches
  • Green chilies 6
  • Peas  1/2 cup
  • Green beans  8
  • Crushed cumin  1 tsp
  • Black pepper 1 tsp
  • Red chili flakes 1 tbsp
  • Rice flour 3 tbsp
  • Egg white 2
  • Bread crumbs  as required
  • Salt to taste
  • Lemon  2
  • Green coriander 1 bunch
  • Oil  to fry

Method:

  1. First add chopped peas, green beans, chopped it make small pieces.
  2. Now add boiled potatoes mash them.
  3. Then add carrots, chopped soya, peas, chopped green coriander, chopped green chilies, lemon juice, chopped red chilies, chopped and crushed white cumin, chopped white cumin, Chopped black cumin, flour rice, salt make kabab.
  4. Now dip them into egg white put bread crumbs on it.
  5. Pour oil in a frying pan, fry the kababs.
  6. When it becomes golden brown then add tamarind chutney for serving.

Ingredients For Fruit Mocktail:

  • Apple juice  1/2 cup
  • Pineapple juice  1/2 cup
  • Pomegranate juice  1/2 cup
  • Orange juice  1/2 cup
  • Lemon   1
  • Mint leaves  few
  • Ice  as required
  • Sugar  2 tbsp

Method:

  1. Put all the ingredients in jug and mix them well.
  2. Now take it out in glass put mint leaves and ice and serve.
