Onion Liver, Baklava And Lakhnavi Kabab by Chef Zakir

Ingredients For Lakhnavi Kabab:

  • Beef mince 1/2 kg
  • Onion  1
  • Ginger garlic paste 1 tbsp
  • Gram flour  4 -5 tbsp
  • Raw papaya 1 tbsp
  • Yogurt 1/4 cup
  • Crushed cumin seeds 1 tsp
  • Desiccated coconut  2 tbsp
  • Poppy seeds 1 tbsp
  • All spice powder  1 tsp
  • Nutmeg mace powder 1/2 tsp
  • Cinnamon powder 1/4 tsp
  • Chili powder  1 tsp
  • Salt  to taste
  • Coriander leaves chopped 1/4 bunch
  • Oil  for fry
  • Coal  a piece

Method:

  1. When water dries then add the flour in a chopper mix it well.
  2. Now take it out in a bowl, make kababs of finger size and deep fry it in hot oil.
  3. Make it golden brown, take it out an place it in a pan.
  4. Now put the coal on aluminum put it into pan.
  5. Pour some oil, give it cover.
  6. Take out the coal after 2 to 3 minutes sprinkle green coriander, lemon juice  then serve it hot

Ingredients For Baklava:

  • Puff pastry 1/2 kg
  • Butter  100 gm
  • Oil 1/4 cup
  • Pistachio  125 gm
  • Sugar  250 gm
  • Water 1/2 cup
  • Lemon juice  1 tbsp
  • Honey  2 tbsp

Method:

  1. First add melted butter, pour oil mix it well.
  2. Now cut the puff pastry into pieces start rolling them.
  3. Spread the puff pastry on first layer. Polish it with oil with help of brush.
  4. Then add chopped pistachios.
  5. Now put the puff pastry layer, repeat it in same way.
  6. When all the layers are completed then make diamond cuts with help of knife.
  7. Now place it in oven for 30 to 35 minutes bake it so that it turns to golden.
  8. Now add the sugar, water and lemon juice in a pan cook it on low temperature.
  9. When the syrup becomes thick then take it out and keep it on a side.
  10. When the baklava becomes ready then take it out in oven spread the ready syrup.
  11. When it becomes cool then cut it into diamond shape.

Ingredients For Onion liver:

  • Mutton liver 1/2 kg
  • Onion  2
  • Green chilies 2
  • Salt  to taste
  • Tomatoes boiled  1 tsp
  • Turmeric  1/2 tsp
  • Coriander powder 1 tsp
  • Cumin powder  1/2 tsp
  • Coriander leaves  1/4 bunch
  • Nutmeg mace powder  1/2 tsp
  • Dry fenugreek leaves  1/2 tsp
  • Ginger garlic paste  2 tbsp

Method:

  1. First add mutton pieces make small pieces.
  2. Now pour oil, add ginger garlic paste.
  3. When it starts to cook then roast it well so that water dries.
  4. Then add onion, boiled tomatoes, green chilies, chopped tomatoes, salt, cumin powder and turmeric mix it well.
  5. Pour water let it cook.
  6. Remove it cover after 8 to 10 minutes add green coriander then serve.
