Brown Rice With Chicken, Pasanday Aloo Waley And Myhallebi by Chef Zakir

Ingredients For Brown Rice With Chicken:

  • Chicken  1/2 kg
  • Rice  300 gm
  • Ghee  1/2 cup
  • Salt  to taste
  • Water  1 1/4 - 1 1/2 glass
  • Vinegar  2 tbsp
  • Thick yogurt  125 gm
  • Ginger garlic paste 1 tbsp
  • All spice powder 1 tsp
  • Chili powder 1 tsp
  • Turmeric  1/2 tsp
  • Oil  2- 3 tbsp
  • Onion  2
  • Green chilies  2-3
  • Cumin seeds 1 tsp

Method:

  1. First marinate the chicken with vinegar, salt, ginger garlic paste, garam masala, chopped red chilies, turmeric, salt, yogurt without water, pour some oil place it in oven on 180 degree C  for roasting and keep it on aside.
  2. Now pour ghee, add chopped onions fry it well make it golden brown.
  3. Then add whole cumin, green chilies pour water.
  4. When water becomes hot then add rice let it cook on low temperature.
  5. When the rice starts to rise, then add chicken pieces cover and simmer it well.
  6. Remove its cover after 8 to 10 minutes take it out on a platter then serve.

Ingredients For Pasanday Aloo Walay:

  • Beef undercut 1/2 kg
  • Onion 2 small
  • Tomato 2
  • Potatoes 2
  • Dry red chilies  2
  • Crushed black pepper  1/2 tsp
  • Crushed red pepper 1 tsp
  • Salt  to taste
  • Oil  3-4 tbsp
  • Coriander leaves  1/4 bunch
  • Green chilies  2-3 big
  • Ginger garlic paste  1 tbsp

Method:

  1. First add beef undercut, make it thin with hammer.
  2. Now pour oil in a pan, add chopped ginger garlic paste, roast it till it water dries.
  3. Now add chopped onions, chopped tomatoes, potatoes, red chilies, salt, dry its water, cover and let it cook.
  4. After 10 to 12 minutes when the potatoes are tendered then add black pepper, chopped green coriander and green chilies mix it well then serve.


Ingredients For Muhallebi:

  • Rice flour  100 gm
  • Milk  1/2 liter
  • Sugar  125 gm
  • Laddo  3-4
  • Fresh cream  1/2 cup
  • Vanilla essence  few drops

Method:

  1. First add rice flour, milk in a bowl.
  2. Pour remaining milk, sugar in a bowl heat it well.
  3. When the sugar is saturated then add rice flour and let it cook.
  4. When it becomes thick then add  fresh cream, few drops of essence, crush moti chur ka laddo mix it well.
  5. Turn off the stove.
  6. Pour in separate glass and crushed motti chur ka laddu.
  7. Put cream on rice.
  8. Serve it when it becomes chill
