Divine Chocolate Cake, Pineapple Smoothie And Chicken Tikka Masala by Zarnak Sidhwa

Ingredients For Divine Chocolate Cake:

  • Butter  250 gm
  • Coffee powder 1 tbsp
  • Water  1 1/2 cups
  • Caster powder 440 gm
  • Vanilla essence  1 tsp
  • Dark chocolate 200 gm
  • Eggs  2
  • Flour  2 1/2 cups
  • Baking powder 1 tbsp
  • Cocoa powder  1/4 cup
  • Cream  1/3 cup
  • Maltesers chocolate  to decorate
  • White chocolate  to decorate

Method:

  1. Heat butter coffee powder, water, sugar, 100 gm of dark chocolate, and stir smooth, let cool then add vanilla essence, stir in eggs and flour, cocoa powder, baking powder, pour batter in a greased and lined pan and let bake for an hour and a half or till done at 150 degrees C.
  2. Let cool.
  3. Combine cream, 100 gm of remaining dark chocolate let melt and stir till smooth, cover and refrigerate till thick ganache is formed.
  4. Spread all over the top of the cake and decorate with white chocolate, maltesers or any other chocolate.

Ingredients For Chicken Tikka Masala:

  • Chicken breast 1 kg
  • Oil  5 tbsp
  • Yogurt 1 cup
  • Cream  1/4 cup
  • Tomatoes  2
  • Tomato  3 tbsp
  • Onion (sliced)  2
  • Onions (chopped) 1 big
  • Coriander leaves 1/2 cup
  • Lemon juice 1 tbsp
  • Green chilies   2
  • Cumin seeds  1 tsp
  • Coriander powder 1 tsp
  • Cloves  3
  • Cinnamon stick  1-2
  • Green cardamom  3
  • Mix whole spice  1 tsp
  • Cumin powder  1 tsp
  • Red chili powder  1 tsp
  • Turmeric powder  1/2 tsp
  • Nutmeg powder  1/2 tsp
  • Ginger garlic paste 3 tbsp
  • Mace  1/2 tsp
  • Cashew nuts  1 tbsp
  • Salt  to taste

Method:

  1. Mix red chili powder, ginger garlic paste, coriander powder, turmeric powder, yogurt, 1/2 tsp salt, lemon juice and 3 tbsp oil.
  2. Apply this marinate to chicken piece and leave it aside for 1 hour.
  3. You can apply this marinate to vegetable, tomatoes and slices onions also.
  4. Put vegetables and chicken pieces on skewers earlier soaked in water.
  5. Keep aside. Let marinate seep in well.
  6. Take a pan and heat oil in it.
  7. Add whole garam masala, green cardamom, cloves, cinnamon sticks and cumin seeds.
  8. As seeds starts sputtering add finely chopped onions.
  9. Saute for a minute and add 1/2 tsp salt, 1/2 tsp turmeric powder, 1 tsp cumin powder, coriander, chili powder.
  10. Add little water so that masala get evenly cooked.
  11. Add tomatoes puree.
  12. Put the lid and let it cook for 10 minute on medium flame.
  13. As the mixture starts boiling add skewered chicken and vegetable pieces.
  14. Cook for few more minutes and serve hot your chicken tikka masala after garnishing with coriander leaves.

Ingredients For Pineapple Smoothie:

  • Pineapple chopped  1 cup
  • Yogurt  1/2 cup
  • Orange juice  1/2 cup
  • Honey  1 tbsp
  • Ice cubes few

Method:

  1. Add all ingredients to blender and blend till smooth and serve immediately.
