Ingredients For Jam Drop Biscuits:
Butter 125 gm
Vanilla essence 1/2 tsp
Caster sugar 1/2 cup
Almonds 1 cup
Egg 1
Flour 2/3 cup
Jam 2 tbsp
Method:
Beat butter, sugar, add in almonds ground, essence, add egg and beat well.
Fold in flour and drop tbsp of butter on trays.
Using handle of a wooden spoon make small indents in the middle of each biscuit and fill with jam, bake at 180 degree C for 15 minutes or till golden.
Ingredients For Fish Burgers:
Fish fillets 1/2 kg
Egg 1
Mayonnaise 2 tbsp
Mustard 1 tbsp
Butter 1 tbsp
Chopped coriander 1 tsp
Salt 3/4 tsp
Black pepper 1/2 tsp
Red chili crushed 1/4 tsp
Potato boiled 1
Crushed cornflakes 3/4 cup
Lettuce leaves as required
Tomato slices as required
Onion slices as required
Burger buns 4
Method:
Boil the fish until it flakes with a fork. Drain cool and flakes.
Combine egg mayonnaise, mashed potato, butter melted, chopped coriander, salt, ground black pepper, red chili crushed in a large bowl.
Stir in flaked fish.
Shape into 6 patties; coat with crushed cornflakes.
Refrigerate 1 hour.
Fry fish patties in hot until golden.
Drain on paper towels.
Serve in buns with lettuce, tomato, onion.
Serve with jalapeno tartar sauce.
Ingredients For Jalapeno Tartar Sauce:
Mayonnaise 1 cup
Gherkins chopped 2 tbsp
Spring onion greens 1 tbsp
Capers, drained 1 tbsp
Dill 1 tsp
Jalapeno pepper 1
Method:
Combine all ingredients; cover and chill.
