Fish Burgers, Jam Drop Biscuits And Jalapeno Tartar Sauce by Zarnak Sidhwa

Ingredients For Jam Drop Biscuits:

  • Butter 125 gm
  • Vanilla essence 1/2 tsp
  • Caster sugar 1/2 cup
  • Almonds 1 cup
  • Egg  1
  • Flour  2/3 cup
  • Jam  2 tbsp

Method:

  1. Beat butter, sugar, add in almonds ground, essence, add egg and beat well.
  2. Fold in flour and drop tbsp of butter on trays.
  3. Using handle of a wooden spoon make small indents in the middle of each biscuit and fill with jam, bake at 180 degree C for 15 minutes or till golden.

Ingredients For Fish Burgers:

  • Fish fillets  1/2 kg
  • Egg  1
  • Mayonnaise  2 tbsp
  • Mustard  1 tbsp
  • Butter  1 tbsp
  • Chopped coriander 1 tsp
  • Salt  3/4 tsp
  • Black pepper  1/2 tsp
  • Red chili crushed 1/4 tsp
  • Potato boiled 1
  • Crushed cornflakes  3/4 cup
  • Lettuce leaves  as required
  • Tomato slices  as required
  • Onion slices  as required
  • Burger buns  4

Method:

  1. Boil the fish until it flakes with a fork. Drain cool and flakes.
  2. Combine egg mayonnaise, mashed potato, butter melted, chopped coriander, salt, ground black pepper, red chili crushed in a large bowl.
  3. Stir in flaked fish.
  4. Shape into 6 patties; coat with crushed cornflakes.
  5. Refrigerate 1 hour.
  6. Fry fish patties in hot until golden.
  7. Drain on paper towels.
  8. Serve in buns with lettuce, tomato, onion.
  9. Serve with jalapeno tartar sauce.

Ingredients For Jalapeno Tartar Sauce:

  • Mayonnaise  1 cup
  • Gherkins chopped  2 tbsp
  • Spring onion greens  1 tbsp
  • Capers, drained  1 tbsp
  • Dill  1 tsp
  • Jalapeno pepper  1

Method:

  1. Combine all ingredients; cover and chill.
