Raan Dam Pukht, Khatti Chicken And Cocktail Prawn by Chef Zakir

Ingredients For Raan Dam Pukht:

  • Mutton leg 1 whole
  • Onion  2-3
  • Coriander leaves 1/2 bunch
  • Ginger garlic paste  2 tbsp
  • Ginger  1 medium piece
  • Green chilies  2-3
  • Mint leaves  1/4 bunch
  • Lemon (juice)  2 lemons
  • Papaya paste  2 tbsp
  • Vinegar  5 tbsp
  • All spice powder 1 tsp
  • Cumin powder  1 tbsp
  • Crushed coriander 1 tbsp
  • Chaat masala 1 tbsp
  • Turmeric  1 tsp
  • Chili powder  1 tbsp
  • Salt  to taste
  • Butter  5 tbsp
  • Oil  3 tbsp

Method:

  1. First add mutton leg, add salt, lemon juice, papaya paste marinate it and keep it on aside.
  2. Now put butter, pour oil add onions for frying.
  3. When the onions becomes soft, then roast it with mutton leg.
  4. When the mutton leg changes its color then add ginger garlic paste, vinegar, chopped cumin , turmeric, chopped red chilies,  chopped coriander, chopped garam masala, roast it for 1 to 2 minutes, pour water, cover and let it cook.
  5. After 25 to 30 minutes when its color changes then add chopped coriander, mint, chopped ginger then mix it well.
  6. In the end take it out in a platter, add chaat masala, sprinkle some ginger then serve.

Ingredients For Khatti Chicken:

  • Chicken 1/2 kg
  • Almond ground  25 gm
  • Ginger garlic paste 1 tbsp
  • Onion chopped 1
  • Capsicum chopped 1
  • Green chilies  4
  • Lemon juice  2 tbsp
  • Yogurt  125 gm
  • Saffron  1 tsp
  • Cumin seeds 1 tsp
  • Crushed black pepper 1 tsp
  • Salt  to taste
  • Butter  4 tbsp

Method:

  1. First pour butter, add chicken roast it till its rawness disappear and changes its color.
  2. Now add ginger garlic paste, roast it more.
  3. Then add capsicum, onion, chopped green chilies, lemon juice, yogurt, simmer it for 3 to 4 minutes.
  4. Now remove it over add saffron, cumin, chopped black pepper, salt, roast it for 1 to 2 minute then serve.

Ingredients For Cocktail Prawn:

  • Jumbo prawns 300 gm
  • Tomato  2
  • Capsicum 1
  • Egg  2
  • Flour  4 tbsp
  • Corn flour  4 tbsp
  • Black pepper powder 1/2 tsp
  • Oil  for fry
  • Mayonnaise  1/2 cup
  • Tomato ketchup 2 tbsp
  • Salt  to taste

Method:

  1. First clean the prawns, cut it into long slice and keep it on a side.
  2. Now sprinkle dry gram flour.
  3. Now add beaten egg.
  4. Then add flour, corn flour, salt, chopped black pepper, salt mix it well and make batter.
  5. Keep it in mind that it should not be thick.
  6. Now add capsicum, cut it into julienne.
  7. Add tomatoes, take out its seeds.
  8. Then put one prawn, then capsicum piece, tomato dip it into batter, and deep fry it well.
  9. When the prawns becomes fry then keep it on a side.
  10. Now add mayonnaise, tomato ketchup mix it and make the sauce ready.
  11. Serve the hot prawns with sauce.
