Shadi Biryani, Creamy BBQ Chicken And BBQ Masala by Chef Gulzar

Ingredients For Shadi Biryani:

For Korma:

  • Beef with fat 1 kg
  • Onion  2
  • Yogurt  1/2 kg
  • Ginger garlic paste 2 tbsp
  • Turmeric  1 tsp
  • Black pepper  1/2 tsp
  • All spice powder  1/2 cup
  • White cumin 1 tsp
  • Red chili flakes  2 tbsp
  • Coriander powder 1/2 tsp
  • All spice powder  1 tsp
  • Yellow food color a pinch
  • Green chilies  5-6
  • Biryani essence few drops
  • Oil  1/2 cup
  • Salt to taste

For Rice:

  • Rice  1/2 kg
  • All spices  1/2 cup
  • Salt to taste

Method:

For Making Rice:

  1. First pour water and boil it.
  2. Now add salt, whole garam masala, make bag of it, when it starts to smell then add rice, boil it 1/4th , filter it and keep it on a side.

For Making Korma:

  1. Pour oil, heat it and add whole onions make it brown.
  2. Now add beef, ginger garlic, paste, roast it well.
  3. Add yogurt, turmeric, chopped black pepper, white cumin, chopped red chilies, chopped coriander, nutmeg mace, garam masala powder, salt mix and cook it well.
  4. Now add water mix it well and cook it till tenders.
  5. In the end add green chilies, few drops of essence cook it well.
  6. Korma is ready.

For Making Layer:

  1. First make a layer of korma, now add rice, then put the masala, make the onions brown.
  2. Then add rice, pinch of yellow color mix it in water and simmer it.
  3. When the simmer is done then dish out it.

Ingredients For BBQ Masala:

  • Talhaar Mirch  50 gm
  • Fennel seeds  1 tbsp
  • Cinnamon  2 sticks
  • Cumin  1 tbsp
  • Black pepper corn  1 tsp
  • Nutmeg  1/2
  • Badyaan flower  1
  • Yellow food color as required
  • Black salt  to taste
  • Kabab  1/2 tsp

Method:

  1. First add talhaar mirch, fennel, cinnamon, shah cumin, whole black pepper, half nutmeg, star anise, pinch of yellow color, kabab then steam it.
  2. Now add all ingredients to blender along black salt chop it well.

Ingredients For Creamy BBQ Chicken:

  • Whole chicken 1
  • Yogurt  4 tbsp
  • Ginger garlic paste  2 tbsp
  • Lemon juice 4 tbsp
  • Cream  2 tbsp
  • BBQ masala  4 tbsp
  • Oil  2-3 tbsp
  • Salt to taste

Method:

  1. Add chicken pieces then make marks with fork.
  2. Now take a mixing bowl add yogurt, add beaten cream.
  3. Now take a mixing bowl then add salt, pour oil add lemon juice, garlic paste, BBQ masala, ginger garlic paste then mix it well.
  4. Then add chicken for marination.
  5. Now grease the oven tray put the marinated chicken bake it on 180 degree C for 25 to 30 minutes then steam it on coals.
  6. In the end garnish it with salad leaves then serve.
