Chicken Mandi And Sheesh Kabab by Chef Gulzar

Ingredients For Chicken Mandi:

  • Whole chicken 1
  • Rice 2 1/2 cup
  • Stock 1 jug
  • Carrots 1
  • Capsicum 1
  • Lemon juice 2 tbsp
  • Garlic paste  2 tbsp
  • All spice 1 tbsp
  • Black pepper  1 1/2 tsp
  • Cinnamon 2-3 sticks
  • Small cardamom  4-5
  • White pepper  1 tsp
  • Vinegar  2 tbsp
  • Butter  2-3 tbsp
  • Olive oil  2-3 tbsp
  • Almonds and pistachio to garnish
  • Salt  to taste
  • Aluminum foil  as required

Method:

  1. Take a mixing bowl, add lemon juice, all spice powder, white pepper, chopped black pepper, garlic paste, vinegar, salt, olive oil mix it well.
  2. Now add batter marinate it with chicken.
  3. Cover it with aluminum foil, steam it for 30 to 35 minutes.

For making Rice:

  1. Put butter, mix oil.
  2. Now add cinnamon, small cardamom make it crispy.
  3. Along garlic paste.
  4. Then add stock.
  5. Along allspice, white pepper, black pepper, carrot, capsicum, along, rice.
  6. When the rice is simmered then take out the chicken from aluminum dish out it.
  7. Garnish it with almonds and pistachio.
  8. Chicken mandi is ready.

Ingredients For Sheesh Kabab:

  • Mutton boneless  1 kg
  • Garlic paste  2 tbsp
  • Vinegar  4 tbsp
  • Carom seeds  as required
  • Black pepper as required
  • Onion (cubes) 2
  • Capsicum  2
  • Tomatoes cubes  2
  • Olive oil  3-4 tbsp
  • Salt  to taste
  • BBQ sticks  as required

Method:

  1. Take a mixing bowl add salt, garlic paste, olive oil vinegar, chopped black pepper, nutmeg mace, black pepper, mutton cubes, chopped onions, tomato cubes, mix it well, leave it for 2 to 3 hours.
  2. Now put the chicken piece in skewer or bbq stick then vegetables cubes, then mutton cubes, then vegetable.
  3. Now give the steam to bbq stick with coals or bake it in oven, cook it till the vegetable become brown and it turns to red from inside, serve it hot.
