Mango Pudding, Cholai Ka Saag And Chanay Ki Daal Keema by Shireen Anwer

Ingredients For Cholai Ka Saag:

  • Cholai ka saag 1 kg
  • Oil  1/4 cup
  • Chopped garlic  1 tbsp
  • White cumin whole 1 tsp
  • Onion  1
  • Salt  1 tsp
  • Crushed red pepper 1 tsp
  • Whole red chilies  8
  • Tomatoes  1 chopped
  • Potato  1 cubed

Method:

  1. Pour oil in a pan, add onions, chopped garlic, whole white cumin, whole red chilies for frying, until the onions becomes soft.
  2. Now add tomatoes, potatoes, salt, chopped red chilies, water, cover and let it cook till the potatoes tendered.
  3. Now add cholai saag cook it till it becomes ready.

Ingredients For Mango Pudding:

  • Evaporated milk 1 tin
  • Condensed milk 1 tin
  • Eggs  4
  • Bread  2
  • Mango chopped  2 cups
  • Mango essence  1/2 tsp
  • Yellow color  1 pinch

Method:

  1. Put the evaporated milk in a blender with condensed milk, egg, big bread slices, chopped mangoes, mango essence, pinch of yellow color in a blender, until it becomes smooth.
  2. Now take it out in a oven proof dish, bake it to 180 degree C for 40 minutes.
  3. Then take it out then serve it chill.

Ingredients For Chanay Ki Daal Keema:

  • Mince  1/2 kg
  • Chana daal  200 gm
  • Onion  2 chopped
  • Tomatoes  3 to 4 chopped
  • Ginger garlic paste 2 tsp
  • Salt  1 1/2 tsp
  • Chili powder 1 1/2 tsp
  • Turmeric 1/2 tsp
  • Cumin 1 tsp
  • Coriander  1 tsp
  • Coriander leaves 2 tbsp
  • Green chilies  4

Method:

  1. Pour oil in a pan, add onions make them brown, until it becomes soft.
  2. Now add ginger garlic paste, mince cook it for 10 minutes for frying.
  3. Then add salt, chopped red chilies, roasted and crushed cumin, chopped coriander, tomatoes, fry it well.
  4. After that pour water, until the mince becomes ready.
  5. Then add garam masala, boiled peas cover and leave it to simmer.
  6. In the end add green coriander, green chilies serve it with naan.

  • MANGO PUDDING turned out excellent. I used canned puree of mangoes as fresh mangoes are not in season. Also substituted evaporated milk with 4 tbsp. milk powder plus 1 cup milk. This was to make the pudding little less in calories.Plz try it.I always measure cups in standard measuring cups.jazak allah.
