Ingredients For Mutton Shanks Kebab:
Mutton leg meat 1/2 kg
Butter 1 tbsp
Carrot 1
Onion 1
Garlic 2-3 tbsp
Tomato paste 2 tbsp
Boiled peas 1 tin
Oil 1/4 cup
Flour 3 tbsp
Thyme 1/2 tsp
Salt to taste
Black pepper powder 1/2 tsp
Method:
Take a mutton, add flour and keep it on a side.
Now pour oil in a pan, add chopped garlic cloves cook it well.
Then add mutton and roast it make it golden brown.
Now add carrot, onions, tomato paste, thyme, salt, and chopped black pepper, cook it for more 1 to 2 minutes.
Then pour water, cover and let it cook.
Remove it cover after 25 to 30 minutes make it dry.
Then add boiled peas, butter, mix it and serve it hot.
Ingredients For Pine Nut Meat Balls:
Chicken mince 1/2 kg
Onion 1
Garlic 3-4
Ginger 1 piece
Tomato 1
Carrot 1
Parsley 1/4 bunch
Tomato paste 1 cup
Flour roasted 2-3 tbsp
Orange juice 1 glass
Pine nut 50 gm
Bay leaf 1
Soya sauce 2 tbsp
Oregano 1/2 tsp
Cloves 2
Salt to taste
Oil for fry
Oil 3 tbsp
Black pepper powder 1/2 tsp
Method:
Take a pan, add chicken mince, onion, ginger garlic chop it well.
Then add tomatoes without seeds, chopped parsley mix it well.
When it is chopped well then add small mince balls and deep fry them.
Now pour oil add oregano, cloves, curry leaves, pine nut roast it for few minutes.
Then add tomato paste, orange juice, salt.
When they start to cook, then add chicken balls, cook it for 1 to 2 minute.
Then add roasted flour, make it thick serve it hot.
Ingredients For Baigan Tamatar Curry:
Onion 1
Bay leaf 1
Cinnamon 1 stick
Water 1 cup
Boiled tomatoes 4
Brinjal 4
Boiled peas 1/2 cup
Oil 1/4 cup
Garlic 4-5 cloves
Turmeric 1 tsp
Cumin powder 1 tsp
Chili powder 1 tbsp
All spice powder 1/2 tsp
Coriander leaves as required
Salt to taste
Method:
First add brinjal cubes, pour water.
Now add chopped onions.
Then pour oil in a pan add onions, garlic make them golden brown.
Add red chilies, curry leaves, cinnamon, turmeric, chopped cumin, chopped garam masala and green coriander cover and let it cook.
Remove its cover after 8 to 10 minutes then add boiled peas, keep its temperature high.
Delicious baigan tamatar curry is ready.
