Chicken Vegetable Biryani, Dahi Phulki Raita And Mango Lassi by Rida Aftab

Ingredients For Chicken Vegetable Biryani:

  • Boneless chicken 1/2 kg
  • Onion  250 gm
  • Tomato  250 gm
  • Yogurt 250 gm
  • Potato 2
  • Green chilies  6
  • Star anise  4
  • Boiled rice  1/2 kg
  • Yellow food color 1 pinch
  • Green peas 1 cup
  • Carrot  1 cup
  • Capsicum  1 cup
  • Oil 1 cup
  • Plum  50 gm
  • Green coriander  1/2 bunch
  • Mint leaves  1/2 bunch
  • Kewra  1 tsp
  • Nutmeg/ mace  1 tsp
  • Salt to taste
  • Turmeric 1 tsp
  • Salt  1 tsp
  • Red chili powder  1 tbsp
  • Whole mix masala  1 tbsp

Method:

  1. Pour oil add chicken piece, fry it.
  2. Now pour oil add peas, carrot, potato, capsicum, fry it and take it out.
  3. Then make onions brown in the remaining oil, Now add tomatoes, yogurt, chopped garam masala, red chilies, salt, turmeric, star anise, plum, nutmeg mace.
  4. After that add chicken pieces and vegetables simmer it for 10 minutes then roast it.
  5. Then add green coriander, mint and green chilies for roasting.
  6. Now make layer of rice, then vegetables.
  7. Then make another layer in same way, add pinch of yellow color, kewra simmer it for 20 minutes.

Ingredients For Yogurt Phulki Raita:

  • Yogurt 1/2 kg
  • Onion  1
  • Tomato  1
  • Boiled potato  1
  • Chopped green chilies 2
  • Baking soda  1 pinch
  • Gram flour  1/2 cup
  • Black pepper powder 1 tsp
  • Salt  1/4 tsp
  • Cumin seeds  1/2 tsp
  • Red chili powder  1/2 tsp
  • Fried cumin seeds  2 tsp
  • Mint leaves  2 tbsp
  • Oil  for frying

Method:

  1. First add flour, salt, cumin, chopped red chilies, soda, water mix it well.
  2. Then pour oil make small phulkiyan.
  3. Now add yogurt with water then beat it.
  4. After that put onions, tomatoes, boiled potatoes cut it.
  5. Then add yogurt, salt, roasted cumin, chopped green chilies, chopped potatoes, tomatoes take it out in a dish.
  6. Garnish with mint then serve.

Ingredients For Mango Lassi:

  • Chopped ripped mango 1 cup
  • Low fat milk 1/2 cup
  • Ice  1/2 cup
  • Plain low fat yogurt 1/4 cup
  • Honey  1 tbsp

Method:

  1. Place the mango, milk, ice, yogurt and honey a blender.
  2. Blend until smooth and frosty serve with a slice of mango.
