Potato Chops With Tomato Sauce, Mango Souffle And Vegetarian Punch Rangi Biryani by Shireen Anwer

Ingredients For Mango Souffle:

  • Evaporated milk  1 can
  • Cream  1 packet
  • Caster sugar  4 tbsp
  • Mango jelly crystals  2 packet
  • Mango puree  1 cup
  • Mango cubes  for decoration 
  • Gelatin  1 tbsp
  • Whipped cream  for decoration

Method:

  1. Make the evaporated milk cool for 6 hours.
  2. Now put the caster sugar, mango puree, mango jelly custard, pour water in a blender then blend it well.
  3. Then add baked cream, saturated gelatin blend it well. Take it out in a serving bowl and set it into freezer, until it freeze.
  4. Now take it out and add water, spread the mango jelly crystal.
  5. Then add cream and mango for garnishing make it cool for serving.

Ingredients For Vegetarian Punch Rangi Biryani:

  • Basmati rice  750 gm
  • Carrot 2
  • Potatoes  2
  • French beans  1 cup
  • Capsicum  1
  • Peas  1 cup
  • Onion brown  1 cup
  • Tomatoes  3
  • Choti methi  3 bunches
  • Dill  1 bunch
  • Yogurt  1 cup
  • Alu Bukhara 8
  • All spice  1 tsp
  • Salt  1 1/2 tsp
  • Oil  3/4 cup
  • Ginger garlic  1 tbsp
  • Coriander powder  2 tsp
  • Chili powder 3 tsp
  • Turmeric 1/2 tsp
  • Saffron  1/2 tsp
  • Milk  1/2 cup

Method:

  1. Pour water, add garam masala, salt, chopped coriander, chopped red chilies and turmeric mix it well.
  2. Now pour oil add yogurt mixture, fried onions, chopped tomatoes fry it well.
  3. Then add carrot cubes, potato cubes, french beans, capsicum, peas, chopped fenugreek  and chopped soya cover and let it cook for 15 minutes, until the potatoes tendered.
  4. Add boiled rice, for assembling spread the rice in a pan.
  5. Put vegetables mixtures.
  6. Then add remaining rice, saffron and milk mix them all.
  7. Simmer it for 20 minutes before serving.

Ingredients For Potato Chops With Tomato Sauce:

  • Bread crumbs as required
  • Butter  1 oz
  • Milk  1 oz
  • Cabbage  1
  • Tomatoes  3
  • Tomato puree 1/2 cup
  • Vinegar 1 tbsp
  • Sugar  1 tsp
  • Salt  1/4 tsp
  • Red chili powder 1 pinch
  • Ginger  1/4 inch

Method:

  1. For making tomato sauce, take a pan, add tomato puree, vinegar, sugar, salt, ginger pieces, chopped red chilies boil it well, until it becomes thick.
  2. Now keep it on a side.
  3. First add mutton chops in water for boiling.
  4. Now take out the chops from water, add vinegar, salt, black pepper then mix it well.
  5. Then mash the potatoes, add butter, milk and salt mix it well.
  6. Now fold the mashed potatoes on its chops, then dip it into egg, roll it into bread crumbs for frying.
  7. While serving add tomatoes, cabbage or salad add tomato sauce for serving.
