Anda Aloo, Prawn Tempura And Rainbow Chicken by Chef Zakir

Ingredients For Anda Aloo:

  • Onion 1
  • Potatoes 3
  • Tomatoes 3
  • Eggs  6
  • Green chilies  5-6
  • Fresh coriander 1/4 bunch
  • Oil  1/2 cup
  • Crushed cumin 1 tbsp
  • Ginger garlic paste 2 tbsp
  • Red chili powder  2 tbsp
  • Oil for frying
  • Salt to taste

Method:

  1. First add boiled eggs remove its skin, fry it in hot oil make them golden.
  2. Now pour oil add ginger garlic paste roast it well.
  3. When it changes its color then add chopped potato, green chilies, green coriander, tomatoes, chopped cumin, chopped red chilies salt, roast it for 3 to 4 minutes.
  4. After that pour water cover and let it cook, so that it tenders well.
  5. When it is tendered then give cut in center decorate it in platter.
  6. Then keep its temperature high dry its water.
  7. After that put boiled eggs for serving.
  8. Delicious anda aloo is ready.

Ingredients For Prawn Tempura:

  • Medium sized prawns 300 gm
  • Ginger garlic paste 2 tbsp
  • Salt to taste

For Batter:

  • Eggs  3
  • Plain flour  1 cup
  • Corn flour  1 cup
  • Dry Flour   1 cup
  • Black pepper powder  1/2 tsp
  • White pepper powder  1/2 tsp
  • Ground green chilies  2 tbsp
  • Oil  for frying 
  • Salt  to taste

Method:

  1. First put the prawn add ginger garlic paste sprinkle salt for marination.
  2. Now add flour, corn flour, egg, chopped green chilies, chopped black pepper, chopped white pepper, salt make the batter.
  3. Pour oil in a pan for frying.
  4. When the oil becomes hot then add prawns, coat it and dip it into batter make them golden brown for frying.
  5. Delicious prawn Tempura is ready.

Ingredients For Rainbow Chicken:

  • Chicken boneless 1/2 kg
  • Onion chopped  1
  • Capsicum chopped  1
  • Red capsicum chopped  1
  • Garlic  4 cloves
  • Tomatoes (deseeded) 2
  • Green chilies chopped 3
  • Parsley chopped 1/4 bunch
  • Apple juice 1 cup
  • Chili powder  1 tsp
  • Black pepper powder 1/4 tsp
  • Salt  to taste
  • Oil  for fry
  • Corn flour  1 tbsp
  • Egg  1
  • Flour  4 tbsp

Method:

  1. First add chicken boneless cut it into stir pieces.
  2. Then add salt, chopped black pepper, chopped red chilies, egg for marination.
  3. Then add onions, capsicum, chopped red chilies, garlic cloves, tomatoes, chopped green chilies, parsley, flour, mix it well marinate it in hot oil deep fry it.
  4. When it turns to light brown, then take it out and keep it on a side.
  5. Now add apple juice, salt then let it cook.
  6. Add corn flour, some water, saturate it make the apple juice thick.
  7. Then put it into fried chicken then serve.
